Role Snapshot – Midnight-Shift Bread Baker

Reporting to the Lead Baker, you will own the overnight bread program—mixing, fermenting, shaping, and baking artisanal loaves that greet our guests each morning at peak freshness. Your skill with natural fermentation, precise timing, and high-capacity production will ensure every sourdough, baguette, and focaccia meets Joe’s uncompromising standards for flavor, texture, and consistency.

Key Responsibilities

Production & Process: 

  • Prepare preferments, mix doughs, and manage bulk fermentation to hit proofing windows 
  • Hand-shape and score loaves, rolls, and bagels with speed and accuracy.
  • Operate deck and convection ovens; adjust steam, bake curves, and load sequencing for optimal crust and crumb.

Quality & Consistency

  • Record dough temperatures, hydration, and pH to maintain product specs.
  • Conduct test bakes and daily cut-tests to verify structure, flavor, and shelf life.
  • Standardize formulas and update bake logs for traceability.

Food Safety & Sanitation

  • Adhere to ServSafe/HACCP protocols: allergen segregation, cooling logs, and overnight cleaning checklists.
  • Maintain spotless mixers, bannetons, loaders, and oven decks.

Inventory & Waste Control

  • Forecast flour, seeds, and inclusions; stage ingredients before shift start.
  • Track yields, trim weights, and returns to minimize waste and protect margins.

Equipment Care

  • Perform nightly preventive maintenance: calibrate scales, clean refrigeration section and log equipment anomalies for maintenance follow-up

What You Bring

  • Professional bread-baking experience in a high-volume artisan bakery.

  • Mastery of natural levain, poolish/biga, and fermentation.

  • Proven track record hitting tight production timelines with minimal supervision.

  • Physical ability to lift 50 lb flour bags, stand for 8–10 hours, and work in a warm bake area.

  • Reliability for a midnight–8 a.m. schedule

  • Passion for craftsmanship, continuous improvement, and meticulous record-keeping.
