Role Snapshot – Midnight-Shift Bread Baker
Reporting to the Lead Baker, you will own the overnight bread program—mixing, fermenting, shaping, and baking artisanal loaves that greet our guests each morning at peak freshness. Your skill with natural fermentation, precise timing, and high-capacity production will ensure every sourdough, baguette, and focaccia meets Joe’s uncompromising standards for flavor, texture, and consistency.

What You Bring
Professional bread-baking experience in a high-volume artisan bakery.
Mastery of natural levain, poolish/biga, and fermentation.
Proven track record hitting tight production timelines with minimal supervision.
Physical ability to lift 50 lb flour bags, stand for 8–10 hours, and work in a warm bake area.
Reliability for a midnight–8 a.m. schedule
Passion for craftsmanship, continuous improvement, and meticulous record-keeping.
