Essential Job Functions:

F&B Heavy Duty Cleaner:

• Cleans and sanitizes all kitchen equipment such as grills, ovens, salamanders, stove tops, smokers, hot boxes, hot wells, pizza ovens, steamers, deep fryers, and other heavy equipment
• Cleans and sanitizes all tiled kitchen floors and drains in all food and beverage service areas
• Cleans and sanitizes kitchen walls, hood vents, coolers and freezers (both walk-in and reach-in), and ceilings (including air vents and light fixtures)
• Cleans and sanitizes storage shelves and prep table surfaces (including the legs and casters)
• Cleans and sanitizes all bars and beverage service areas
• Removes, cleans, and sanitizes kitchen floor mats and ensures proper placement
• Cleans and sanitizes TDR floors, tables, chairs, walls, and ceilings (including air vents and light fixtures)
• Cleans and scrubs the dock and trash areas
• Cleans and sanitizes service hallways
• Operates industrial cleaning equipment and uses industrial strength cleaning chemicals
• Ensures safe and proper use of chemicals and wears appropriate protection

All Stewards, Heavy Duty:

• Maintains a high degree of sanitation in work stations
• Keeps food areas free of debris and trash at all times
• Reports to work on time
• Communicates with Supervisor when there are supply shortages
• Ensures thorough communication between shifts
• Remains up to date on all Departmental Policies and Procedures
• Complies with all departmental rules, side work assignments, and departmental procedures
• Gives excellent internal and/or external guest service and proactively seeks ways to improve service
• Performs all other duties as assigned
