Harvest Kitchen, established in 2015, is a successful organic event catering company based in Vista (near San Marcos) in need of a Full-Time Chef Captain.
The main purpose of a Chef Captain @ Harvest Kitchen is to act as the Lead on offsite events, working in tandem with FOH Captain, Event Planner/Client when needed, but mainly to manage the staff and food to company expectations. The Chef Captain is responsible to prep during the week and work most weekends captaining events.
RESPONSIBILITIES
Chef Captain ($28/hr)
Manage event chef staff and work most weekends
Communicate with FOH Captain (food service timeline, changes, etc)
Lead pre-shift meeting with event chefs + FOH Captain
Ensure flawless execution of menu + plating
Review BEO prior to event
Drive company vehicles (vans/food truck) to and from events
Setup rental kitchen equipment + plating line; manage equipment issues
Pack-out vans/food truck ensuring all HK equipment is returned
Fill out post event survey
Prep Chef ($25hr)
Work during the week prepping meals
Following directions from the Executive Chef
Assist the events team with tasks on the prep lists created and to finish any personally assigned tasks within a certain time frame prior to the event date
REQUIRED SKILLS
Proven experience as chef
Experience in using cutting tools, cookware and bakeware
Knowledge of various cooking procedures and methods
Experience in using a computer for cataloging recipes, email, calendar, etc.
Ability to work in a team
Very good communication skills (both peer to peer and electronically)
Excellent physical condition and stamina
High school diploma or equivalent; Diploma from a culinary school a plus
