We are seeking a Line Cook to join our team. This individual helps create an unforgettably positive impression to our Members and Guests, exuding the genuine warmth of the Club by serving welcoming and efficient hospitality and providing a seamless dining experience at our restaurant/cafe. The Line Cook is responsible for preparing and cooking food items consistently and adhering to all quality and recipe standards, while maintaining the cleanliness and safety of all common areas and kitchen stations.

ESSENTIAL DUTIES

- Remains attentive, friendly, helpful, and courteous to guests, managers, and fellow employees.
- Reports to work and clocks in/out for scheduled shifts and meal and rest breaks on time and in complete and proper uniform.
- Maintains complete, up-to-date knowledge of all menu items and their ingredients. Memorizes and utilizes serving portion sizes and basic meal prep procedures used in the kitchen. Follows recipes, portion controls, and presentation specifications as set by the Chef de Cuisine.
- Maintains a proper, neat, clean and safe kitchen line. Ensures that the kitchen, all food prep areas, and all food, beverage and dry storage areas storage areas meet restaurant sanitation standards.
- Sets up and breaks down work station at the start and end of each shift. Completes daily opening and closing duties and cleaning according to established side work.
- Maintains fully stocked kitchen line throughout shift according to the current meal period.
- Works with team of cooks to do portion prep work, including, but not limited to washing, peeling, cutting, and seeding fruits and vegetables, weighing, mixing measuring ingredients according to recipes, baking, roasting, broiling, and steaming meats, fish vegetables, and other foods, carving and trimming meats such as beef, veal, ham, pork, and lamb.
- Ensures food is stored and cooked at correct temperature by regulating temperature of ovens, broilers, grills, roasters and other equipment.
- Ensures freshness of food and ingredients by checking for quality, keeping track of old and new items, and rotating stock.
- Monitors food quality and presentationensures proper presentation and garnish set-up for all dishes.
- Prepares and cooks all menu items as directed promptly and correctly; turns or stirs foods to ensure even cooking.
- Observes and tests and tastes foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.
- Prepares dishes for guests with food allergies or other special requests.
- Substitutes for or assists other cooks during emergencies or rush periods.
- Performs other duties as assigned.

QUALIFICATIONS & SKILLS

- Ability to read, speak, and understand English; bi-lingual English/Spanish a plus.
- High level of professionalism and attention to detail.
- Excellent verbal communication and organizational skills.
- Ability to read and comprehend food tickets, memos, correspondence, and special instructions.
- Basic math skills to calculate food ingredient measurements and meal portions.
- Comfortable working with a team in a fast-paced kitchen environment.
- Problem solving, reasoning, and thinking out of the box; ability to apply common sense understanding to better serve our internal and external guests needs.
- Ability to handle guest complaints and resolve them to satisfactory results.
- Knowledge of the principles, procedures, and kitchen and banquet equipment used in the storage, care, preparation, cooking, dispensing, and serving of food in large quantities.
- Basic knowledge of food and ingredients.
- Ability to remain attentive, friendly, helpful and courteous to managers and fellow employees.
- Ability to read, comprehend, and follow all Club policies, systems, controls and procedures.
- Ability to read and comprehend the Employee Handbook.
- Ability to maintain personal grooming in compliance with appearance standards.
- Ability to work a flexible schedule including nights, days, weekends, and holidays.
- Interest in developing culinary skills under the supervision of the executive chef team.

EXPERIENCE & EDUCATION

- Minimum three years cooking experience in a high-volume restaurant environment; fine dining and/or country club experience preferred.
- High school diploma or equivalent preferred.
- Basic culinary skills and background.
- Basic knowledge of kitchen operations including food storage and food safety requirements.
- Serv-Safe Food Handler certified.

PHYSICAL REQUIREMENTS

- Ability to stand for prolonged periods of time, at least eight hours.
- Ability to walk, climb stairs, balance, stoop, kneel, crawl, crouch, bend, stretch, twist, and reach.
- Ability to push, pull, carry, and lift at least 50 pounds on a regular basis.
- Ability to move about freely in a two-story kitchen facility.
- Ability to withstand continuous repetitive motions.
- Primarily works indoors; occasionally works in outdoor weather conditions during special events.
- May be exposed to loud noise.
- Works with kitchen equipment containing moving mechanical parts.
- May come into contact with fumes, open flames, hot and cold surfaces, airborne particles, toxic or caustic chemicals, sharp knives and other objects.
