Responsibilities:
- Responsible for meeting annual operating budgets and Yavapai Gaming Agency Key Performance Indicators (KPI) as identified.
- Working with staff to plan menus that are flavorful and popular with guests
- Supervising an Inventory Control System to assure accurate data of current stock.
- Replenishment needs and utilization patterns, estimating food and beverage costs, working with staff for efficient provisioning and purchasing of supplies.
- Supervising portion control and quantities of preparation to minimize waste.
- Performing frequent checks to ensure consistent high quality of preparation and service.
- Supervising operation of bar to maximize profitability, minimize legal liability, and conform to the regulations of the State Liquor Board.
- Working with other management personnel to plan marketing, advertising, and any special restaurant functions.
- Directing hiring, training, and scheduling of food service personnel.
- Investigating and resolving complaints concerning food quality and service, enforcing sanitary practices for food handling, general cleanliness, and maintenance of kitchen and dining areas, complying with all health and safety regulations.
- Reviewing and monitoring revenue expenditures to ensure that they conform to budget limitations, developing and administering the Food and Beverage operating budget.
Requirements:
- Must be 18 years or older to apply.
- Must have a High School Diploma or GED.
- Must pass a pre-employment drug screening and adhere to the Tribal/Gaming's Drug and Alcohol policy.
- Must adhere to all Tribal/Gaming Agency Personnel Policies and Procedures.
- Must possess excellent interpersonal and communication skills, and a strong orientation to excellent guest service.
- Must have a high degree of confidentiality.
- Must have an understanding of basic accounting and/or bookkeeping.
- Must have a pleasant, polite manner when dealing with public and staff.
- Must have good organizational skills for dealing with diverse duties and staff.
- Must have average or above skills with PC and Microsoft software programs (Word, Outlook, Excel, Access).
- Must have a Food Handlers Training Certificate.
- Must have successfully completed and be well versed in the AZ State Title 4 approved program.
- Must obtain a Management Liquor Training Certification.
- Must have prior supervisory experience.
- Must be able to lift and periodically carry up to 45 lbs.
- Must be available to work a variety of shifts including weekends and holidays.
Full-time position, benefited position, starting rate $54,613-$91,203 . Must pass a background security check prior to and during the course of employment. Open until filled.
