Position Overview:
Join our opening team and bring bold flavors to life. As a Line Cook at Merka Saltao, youll work shoulder-to-shoulder with a passionate crew, preparing fresh, high-quality dishes in a fast-paced, high-energy kitchen. Youll learn authentic Peruvian cooking techniques from wok-fired Lomo Saltado to street-style classics and gain the skills to grow into new roles as we expand.

Youre fast on the line, sharp with your prep, and steady under pressure. You take pride in your food and your station. Youre hungry to learn and ready to bring your energy to a kitchen built on bold flavors and team-driven service.
What Youll Do
- Execute high-quality, made-to-order dishes with speed and consistency
- Prep fresh ingredients and maintain tight station organization
- Learn authentic Peruvian cooking techniques (yes, real wok fire!)
- Uphold food safety, sanitation, and kitchen standards
- Communicate clearly with FOH and BOH teams to keep the rhythm smooth
- Take ownership of your role with room to grow as we expand
- Contribute to a culture of hustle, heart, and hospitality
What Were Looking For
- 12 years of experience on a fast-paced line preferred (but well train the right people)
- Comfortable with prep, saute, grill, or wok cooking
- Passion for global flavors and Latin cuisine is a big plus!
- Clean, organized, efficient, and proud of your plate
- Team player with a strong work ethic and positive attitude
- Ability to stand for long periods and handle the heat (literally)
- Able to obtain a Food Handlers certificate and maintain standards of excellence.
