Summary:

The Kitchen Cook II in a kitchen is responsible for preparing and cooking a variety of food items in large quantities, adhering to recipes and production sheets. This includes tasks such as prepping ingredients, cooking various dishes, and maintaining a clean and organized workspace.

Responsibilities:

Preparing and cooking various menu items, including appetizers, salads, banquets, and a la carte items.

Following established recipes and production sheets to ensure quality and consistency.

Ensuring food is cooked properly and to the right standards, and maintaining food quality throughout the preparation process.

Determining the amount of food items to be ordered and maintaining adequate supply levels.

Inspecting work and storage areas for compliance with sanitation codes and adhering to food safety regulations, including HACCP-based procedures.

Providing training to new employees on cooking skills, safety procedures, and food preparation requirements.

Maintaining a clean and orderly kitchen environment, including cleaning and sanitizing work surfaces, equipment, and tools.

Communicate consistently with the supervising Sous Chef, keeping them abreast of all department activities, and ensure that the kitchen and equipment are in good working order and that the work area is clean and hazard-free. Notify the supervising Sous Chef immediately if the kitchen and equipment are not in good, safe working order.

Knows and complies consistently with standard portion sizes, cooking methods, quality standards, and kitchen rules, policies, and procedures.

Prepares items for broiling, grilling, frying, sauteing, or other cooking methods by portioning, battering, breading, seasoning, and/or marinating.

Follows proper plate presentation and garnish setup for all dishes.

Assists in food prep assignments during off-peak periods as needed.

Comply with the company's drug-free and tobacco/nicotine-free policy.

All other duties as assigned.

Experience/Qualifications:

At least 2 + years of related work experience.

Ability to lift to 25 lbs. consistently and 50 lbs. infrequently.

Must be able to legally work in the USA.

Education and Certification(s)/License(s):

High school diploma or equivalent preferred.
