Salary: $55,000 to $65,000 / year.

As a Sous Chef with FISD at The Bolles School in Jacksonville, FL, you will support the daily operations of a robust food service student dining program. The Bolles School, an independent college preparatory day and boarding school known for its global reputation and commitment to excellence, serves approximately 1,800 students annually across four beautiful campuses, spanning pre-kindergarten through high school. The food service operations include breakfast, lunch, and dinner seven days a week, including; retail, catering, and concession services.

Youll be part of a dedicated culinary team committed to delivering high-quality, nutritious meals that enhance student life and strengthen the school community.

Key Responsibilities:

• Assists the Executive Chef with managing cost controls and controlling expenditures for the account
• Assists the Executive Chef with planning and creating menus
• Produces and executes catering events
• Rolls out new culinary programs in conjunction with FISD marketing and culinary team
• The ideal candidate should reside or be able to commute to Jacksonville, FL
• The primary working hours are from 6:00 AM to 4:00 PM. However, flexibility is required to accommodate responsibilities outside of standard business hours as needed.
• During the summer months of June and July, this role may be asked to travel to other locations within the FISD school portfolio.

Preferred Qualifications:

• A.S. or equivalent experience
• At least 3-5 years of progressive culinary/kitchen management experience, depending upon formal degree or training
• Catering experience is a plus
• High volume, complex foodservice operations experience - highly desirable
• Institutional and batch cooking experiences are helpful
• Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation
• Must be experienced with computers; to include Microsoft Office (Word, Excel, and PowerPoint), Outlook, E-mail and the Internet
• Must be willing to participate in client satisfaction programs/activities
• ServSafe certified - highly desirable
• Flexibility to travel during June/July
