Skilled Prep Cook

Park Avenue Catering specializes in high-volume, fine-dining events across Sonoma, Marin, and Napa Counties. Our Cotati kitchen is where the culinary groundwork is laid through careful prep, ingredient handling, and attention to detail that sets the tone for every dish served.
As a Skilled Prep Cook, youll support our kitchen team by handling essential prep tasks that keep production running smoothly. This role demands a good understanding of sauce preparation, protein handling, and refined knife skills. You will work closely with the kitchen team to ensure food is prepped accurately, efficiently, and with minimal waste.
This includes washing, chopping, and portioning ingredients, organizing storage systems, and helping to maintain a clean, food-safe environment. The ideal candidate is fast, organized, and detail-oriented, with a strong work ethic and willingness to learn.

Key Responsibilities:
Prepare sauces and accompaniments in large volumes following detailed recipes (e.g., French classics, Mediterranean dips, aiolis, and modern spreads)
Convert recipes to small tasting-size portions as needed and execute precise prep with minimal waste
Fillet fish cleanly and efficiently, minimizing product loss
Grill and sear proteins consistently to proper doneness
Wash, peel, chop, dice, and portion vegetables, herbs, and other ingredients
Label, date, and store prepped items according to PAC systems and food safety guidelines
Follow prep lists and instructions provided by kitchen leadership
Keep workstations clean, sanitized, and organized throughout the shift
Assist with packaging and organizing items for events or production as needed
Alert leads when inventory is low or items need restocking
Support team members and jump in where needed to help meet production goals
Help with basic cleaning tasks such as dish rotation, sweeping, and sanitizing

Qualifications:
1+ year of kitchen experience preferred, but open to training the right candidate
Basic knife skills and ability to follow clear instructions
Comfortable working on your feet for extended periods and lifting up to 50 lbs
Reliable, punctual, and able to work efficiently in a fast-paced setting
Strong attention to detail and a commitment to minimizing waste
Team-oriented mindset with a positive attitude
Must be available to work weekdays and some weekends as needed
