We are a busy, full-service, from-scratch restaurant and brewery in the heart of downtown Sun Prairie, WI (twenty minutes East of downtown Madison). Locally owned, with on-site, involved ownership. We offer a creative, pub style food menu with wood-fired pizzas and monthly featured menu items that allow for further creative development and flexing by our Head Chef. Paired with high-quality house-brewed beers, cocktails and a top-notch FOH staff in a modern, hip space, we offer a customer experience unlike any in the area. Our open-kitchen concept allows for the wood-fired pizza oven as well as nearly all kitchen stations to be visible during service.
We are currently accepting resumes for an experienced, working Head / Executive Chef candidate to step in and lead our strong BOH team. We have an experienced, tight knit kitchen crew that excels at what they do, need a strong leader to manage and coordinate the team.
Working Head Chef Position
Ideal candidate:
3+ years of head chef or kitchen manager experience
8+ years of overall commercial kitchen experience understands all kitchen stations and is proficient in each
Ability to thrive in a fast-paced and sometimes high-pressure environment
Team player with the ability to work and communicate with managers and staff from both FOH and BOH
Passion for creative cooking
Wood-fired pizza experience nice but not necessary
The ability to problem-solve and work well under pressure
Excellent communication and teaching / training skills
Holds themselves and team to high standards and works to achieve and surpass those standards daily
Understands the importance of the overall customer experience and the kitchens part in that experience
Embraces administrative side of position as well as culinary side
Knowledge of food preparation and existing health and safety standards
Ability to effectively supervise, manage, direct, and lead a team of around 14 individuals
Time management strengths with the ability to multi-task
Scratch kitchen experience
Familiarity with best practices in the industry
Must be available to work weekends and evenings or other shifts as necessary
Competent computer skills and ability to learn more if necessary
ServSafe certification
Job duties:
Lead, supervise and manage all BOH employees
Menu creation in conjunction with management
Work any kitchen station as necessary
Maintain and manage food quality standards and recipe adherence
Interview, hire and train BOH personnel. Conduct performance reviews and staff check-ins and meetings
Coordinate cross-training activities and menu training with FOH and BOH staff
Develop process/training plan(s) for BOH and implement as necessary
Responsible for BOH staff promotions and disciplinary actions
Maintain impeccable safety and sanitation standards
Manage labor, labor scheduling and labor costs
Manage food and product ordering by keeping detailed records and minimizing waste
The ability to execute all daily operations to include but not limited to; prep, line production or cooking, wood-fired oven production and cooking, shift execution, ordering, recipe adherence, and recipe development.
Maintain diligent record-keeping and report to management / owners in a timely manner
