The Compton Hotels Beverage Manager is responsible for developing and overseeing all aspects of beverage operations across one or more venues. This includes managing staff, executing bar programs, optimizing profitability, and ensuring alignment with each venues brand identity. This leadership role supports the Restaurant General Manager and serves as an on-the-floor manager ensuring exceptional guest experiences, strong financial results, and operational excellence.

What You'll Do:Leadership & Team Management
- Supervise, hire, train, and evaluate all FOH beverage staff (bartenders, barbacks, servers).
- Create and manage schedules to align staffing with service demands and labor efficiency.
- Develop and lead comprehensive training programs focused on beverage service, guest experience, and safety.
- Provide daily on-the-floor leadership, coaching, and in-the-moment support.
Beverage Program Development
- Design and evolve creative, seasonal bar menus in alignment with venue identities.
- Oversee wine and spirits programs to ensure quality, variety, and profitability; partnering with chefs and service manager to align beverage offerings with food menus and guest expectations.
- Evaluate new products, vendors, and trends to enhance offerings; negotiating purchasing agreements to maximize quality and value.
- Host tastings and educational sessions to promote team knowledge and engagement.
- Collaborate with chefs and service leadership to align food and beverage experiences.
Operations & Financial Stewardship
- Lead inventory, purchasing, and vendor management; maintain accurate records.
- Actively monitor and manage beverage COGS; adjust pricing/purchasing to optimize margins.
- Ensure compliance with liquor laws, health codes, safety protocols, and internal SOPs.
- Support financial planning and P&L review with focus on beverage revenue and margins.
- Develop SOPs for inventory management, shift prep, ordering, and service standards.
Guest Experience & Events
- Deliver consistent, high-quality guest experiences through personalized service.
- Engage proactively with guests and lead service recovery when needed.
- Ensure bar areas are clean, organized, and fully stocked to meet service standards.
- Collaborate with hotel/event teams on beverage execution for private dining and events.
Facility & Equipment Oversight
- Monitor maintenance of beverage storage and dispensing equipment.
- Report and follow up on repair needs with facilities or hotel engineer.
- Implement and uphold cash handling, security, and safety protocols.
Risk Management & Safety
- Ensure a safe working and guest environment to reduce the risk of injury and accidents; complete accident reports promptly in the event that a guest or employee is injured.
- Complies with federal, state and local health and sanitation regulations and company sanitation procedures as evidenced through local health department and third-party audits.
- A minimum of 5 years high volume restaurant required, as well as 3 years of full-service bar management experience required.
- Proven expertise in cocktail design, wine list curation, and beverage program execution.
- Strong financial acumen and experience managing beverage P&L.
- Systems-driven mindset with ability to create and implement SOPs.
- Team-oriented leadership style with strong communication and training skills.
- Enthusiastic, motivated, and capable of balancing creativity with operational discipline.
