This Cook position will assist with maintaining high standards of control for quality food production and service for approximately 150 Cadets, as well as preparing meals that align with Federal Child Nutrition Program guidelines.Job duties of this position include, but are not limited to:
- Providing nutritionally adequate meals meeting Federal Child Nutrition Program meal patterns
- Following operational procedures for efficient and effective food production and service
- Assisting with food and supplies requisition as needed
- Checking the cost and quality of items received
- Issuing proper storage for items
- Following Tarheel ChalleNGe Academy procedures for inventorying food, supplies, and equipment
- Maintaining an environment conducive to protecting the health and well-being of the facility's Cadets through high levels of food safety and sanitation standards
- Following federal and state safety and sanitation procedures
- Assisting supervisor with maintaining integrity and accountability of the facility Child Nutrition Program through compliance with all federal and state regulations and Department Child Nutrition policies
- Assisting with maintaining required records (production records)
- Reporting inventories in compliance with federal and state regulations
- Using and caring for all equipment properly
- Communicating positively with facility staff, Cadets, and food service staff
- Assuming responsibilities as designated by the Food Service Supervisor I
- Inspect incoming fresh vegetables, fruit, and meats to determine that they meet purchase order specifications
- Maintain a high standard of personal cleanliness as well as food sanitation
- Interpret and follow standardized recipes while adhering to planned menus
- Adhere to oral and written instructions
- Plan food for a large number of persons
- Requisition needed food and supply items
Note to Current State Employees : The salary grade for this position is NC01 . State employees are encouraged to apply for positions of interest even if the salary grade is the same as, or lower than, their current position. If selected for this position, a new salary will be recalculated taking into consideration the quantity of relevant education and experience, funding availability, and internal equity. Based upon these factors, a pay increase MAY result.

About the Tarheel ChalleNGe Academy:The Tarheel ChalleNGe Academy (TCA) is a quasi-military style resident program for at risk youth in the ages of 16-18. Sponsored by the North Carolina National Guard, the TCA mission is to redirect the efforts of young adults who have had trouble succeeding in the normal high school environment. The intent is to give them the skills and attitude to become productive citizens in their communities. The Academies are located in two different locations: Salemburg and New London, North Carolina. It is a 17-month program divided into two distinct phases: a five-month in-residence phase at the academies, and a twelve-month post-residential phase immediately following graduation for the in-residence phase. TCA seeks to improve the life and future employment potential of its cadets by concentrating on eight core components which are: Life Coping Skills, Academic Excellence, Responsible Citizenship, Job Skills, Service to Community, Health and Hygiene, Physical Fitness, and Leadership/Followership.

To qualify for this position, applicants must demonstrate ALL of the following KSAs:
- Experience with dispensing and serving food in small and large quantities.
- Experience using various pieces of equipment, including food processors and ovens.
- Experience with safe food handling.

Education and/or experience in food preparation that is directly related to the job and consistent with accepted practices of the trade equivalent to one year of experience in a commercial and/or institutional setting.PLEASE NOTE : The selected will be required to complete the following:
- Training provided by TCA: Staff Acclimation Course, Foundations Course, Gang Awareness / Conflict Resolution. Non-Violent Cis Intervention Training and Hands-Off Training
- First Aid / CPR certification (re-certification required every 2 years)
- Attend Food Safety training classes as required.
