Job Summary:Oversees all baking production for Grand Canyon National Park Lodges working out of the El Tovar kitchen facility.

The Details:Position Type: Year RoundSalary/Pay: $57,304 a yearSchedule: Typical schedule is 40 hours, 5 days per week (may include weekends, evenings, and holidays)

Responsibilities

  • Oversee hands on production of pastry and confection products required for the dining rooms, banquets and special events

  • Supervise the bakers in the production of breads, rolls, pastry, and dessert items in prescribed amounts for the various F&B units.

  • Ensures quality control of all baked items and items meet standards set by the Director of Culinary.

  • Manages lobby dessert table display.

  • Ensures compliance with ServeSafe HACCP food sanitation standards for the bakery.

  • Work with Executive Sous Chef on development of daily specials for the bakery.

  • Schedules, trains and manages payroll of bakers.

  • Assist with the monthly inventory for the bakery

  • Order any special products needed for special events.

  • Assist in the management of the El Tovar kitchen as necessary.

  • Manages holiday decorations and seasonal baking/pastry specials.

  • Conduct annual reviews for hourly personnel in the bakery.

  • Assist the Director of Culinary in the equipment needs of the bakery.

  • Ensure that assigned staff is adhering to all safety and risk management policies.

  • Other duties as assigned.

Qualifications

  • Degree from an accredited culinary academy or institute or equivalent industry experience.

  • Minimum of two years baking and pastry experience in a high volume bakery store or kitchen.

  • Thorough familiarity with baking recipes, portions, and equipment.

  • Ability to train and supervise staff.

  • Ability to stay current with pastry trends and add value to the kitchen operations.

  • Must be available to work earlymorning shifts, weekends, and holidays.

  • Ability to pass ServeSafe HACCP food sanitation course.

  • Good verbal communication with the ability to professionally interact with a broad cross-section of guests and employees.

Physical Requirements: The person in this position must be able to meet the following physical requirements.

  • Constantly stand, walk, reach upward, bend, lift/carry/handle 10 lbs or less and up to 11 - 50 lbs, push/pull 12 lbs or less and up to 13 - 25 lbs
  • Frequently reach above the shoulder, squat/kneel, lift/carry/handle 21 - 50 lbs and push/pull 26 - 40 lbs
  • Occassionally sit, climb/crawl, lift/carry 51 - 100 lbs and push/pull 41 - 100 lbs
