The Chef De Cuisine is responsible for overseeing kitchen staff on multiple levels, mentoring and coaching the team. This is an opportunity for creativity building out menus and specials. The environment is bustling as there are multiple large kitchens within the property that provide full food and beverage services to our bike/ski, local, hotel and business guests. This role provides every opportunity to continue developing a high-level career in the art of culinary, opening opportunities of for advancement internally and externally throughout the Tourism / Hospitality industry.

Compensation Information: $80,000 per annum

Physical Requirement: Heavy (H); work activities involve handling loads up to 20kg; predominantly in an indoor setting.

This job position requires physical presence at the designated location.

Skills you bring with you:

  • Culinary Education: Diploma or degree in culinary arts or relevant experience.
  • Experience: Minimum 5 years of experience in an elevated dining environment, with at least 3 years in a Senior chef role.
  • Skills: Strong culinary skills including menu planning, food preparation, and presentation; well-versed in developing culinary manuals.
  • Leadership: Proven leadership skills, with experience managing and motivating a team.
  • Communication: Excellent communication skills, with the ability to communicate effectively with staff, customers, and suppliers.
  • Certifications: Food safety certification.
  • Well-versed in inventory, recipe management, and food cost controls.

Primary Responsibilities:

  • Managing the Sous Chefs, Junior Sous Chefs, and Chef De Parties, guiding their oversight of the kitchen staff with primary focus on selection, training, and supervising of daily work assignments.
  • Act as a coach and mentor; manage performance by setting objectives.
  • Develop and implement new menus, specials, and promotions.
  • Oversee the daily kitchen operations, including food preparation, plating, and presentation.
  • Assist with budgeting and cost control, including labor costs, food costs, and inventory management.
  • Manage kitchen inventory, including ordering supplies, managing stock levels, and minimizing waste.
