We are seeking a highly motivated, experienced, and dedicated Sous Chef to join our culinary team in Falmouth, Maine. This pivotal role works directly with the Head Chef, assisting with all kitchen duties, and serves as the primary leader and manager of all Back-of-House (BOH) staff in the Head Chef's absence. The ideal candidate will be instrumental in ensuring that all food production workers adhere to the quality standards established by the Head Chef, while strictly maintaining all food safety and health code guidelines.
GENERAL JOB DESCRIPTION:
The Sous Chef assists the Head Chef with all kitchen duties, directs and manages all BOH staff, and serves as the leader in the absence of the Head Chef. This role is responsible for ensuring that all food production workers perform their duties as prescribed by the quality standards established by the Head Chef. The Sous Chef ensures compliance with all food safety and health code guidelines, assists with menu planning and creating food specials, and oversees and manages food production and presentation. Effective communication between Front-of-House (FOH) and Back-of-House (BOH) is also a key responsibility.
DUTIES & RESPONSIBILITIES:
Monitors and manages day-to-day kitchen operations, including direct management of all BOH staff.
Assists with payroll cost management by sending BOH employees home if not needed, ensuring efficient staffing.
Assists with food and kitchen equipment ordering, maintaining inventory and par levels.
Collaborates on menu planning and the development of new food specials.
Assists with the hiring, training, motivating, and, when necessary, termination of all BOH employees.
Maintains strict adherence to all food safety and health code regulations, including assisting with cleaning schedules and ensuring all employees complete their assigned duties.
Monitors and manages food production and presentation to maintain high standards of quality and consistency.
Facilitates clear and effective communication between FOH and BOH teams to ensure smooth service.
Assists with any additional responsibilities or tasks assigned by the Head Chef or General Manager.
QUALIFICATIONS:
Exceptional food and beverage knowledge.
Extensive kitchen experience in a fast-paced environment.
Proven time management skills and ability to prioritize effectively.
Strong interpersonal skills and a collaborative attitude.
Excellent communication skills, both verbal and written.
Culinary degree preferred or equivalent cooking experience in a similar setting.
Current Food Safety Certification is required.
