Position Summary

The Floor and Wine Manager leads us in service at Le Crocodle, and supports our wine program integrally, both operationally and in its growth.. This critical role brings together wine service in the dining room with the wine programme across the building. As the steward of a strong and growing programme, you'll support and mentor a high-performing team, importantly including the Le Crocodile Head Sommelier, while creating the backdrop for life's most meaningful momentsfrom intimate gatherings to milestone celebrations that become part of our guests' personal histories.

Strategic Leadership & Team Development
  • Fosters an environment of generosity, focus, kindness, and discipline amongst all staff
  • Has the drive to know the steps and service of every position on the floor and could jump in and not only work any of the positions but also expertly train any new member to the team
  • Anticipates the needs of the team, and provides support in this vein
  • Works with Head Somm and GM selling wine, educating staff about what we have on offer, maintains the organization and accuracy of stock in house, builds enthusiasm amongst staff members to taste, learn, discuss, feel confident about and sell what we have to share with guests in a fashion that highlights that product and our commitment to serving it.

Guest Experience
  • Acting as a point of contact for guests and regulars, developing repeat and return customers, identifying individuals who are neighbors or just diners / drinkers possessing a sensibility rewarded by what we offer and rewarding to serve in our space.

Operational Excellence
  • Develop efficient systems and communication protocols
  • Submit cash drops and cash tips at close of shift accurately
  • Maximize wine sales in the venue, both directly- by selling wine to tables- and indirectly- through staff education
  • Balance financial targets with quality standards
  • Works in close collaboration with Service & Wine Director and the chefs to assure the highest of standards in the dining room
  • Inform comanagers and ownership of the details of service, staff performance, guest experience, repairs and maintenance issues and a general take on the tone of service
  • Detailed commitment with sanitary procedures, dining room cleanliness, proper uniforms, food handling and general maintenance of the dining room that are up to, and beyond that of, the Department of Health
Qualifications
  • 2+ years restaurant management experience, 2+ wine specific experience
  • Proven track record in team leadership and development
  • Strong financial acumen and business insight
  • Hands on approach with empathetic leadership style
  • Calm presence under pressure and creative problem-solving skills
  • Sense of humor

Compensation Details

Compensation: Salary ($80,000.00 - $85,000.00)
