+ Details: Working as the Sous Chef, you will be responsible for assisting the Executive Chef with overseeing kitchen operations while maintaining a safe and sanitary work environment for the staff. You will assist in preparation or direct the preparation of meals in accordance with corporate programs and guidelines. This is an exciting opportunity for an energetic, entrepreneurial Culinary professional.

Key Responsibilities:

+ Helps plan regular and modified menus according to established guidelines

+ Assists in maintaining budgets.

+ Follows standardized recipes to comply with food cost. Completes and utilizes daily production worksheets and waste log sheets. Tastes completed meals to ensure quality.

+ Trains kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation based on Company and regulatory standards

+ Establishes and maintains cleaning and maintenance schedules for equipment, storage and work areas. Ensures that kitchen staff follows and completes schedules as assigned

+ Maintains inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed

+ Complies with federal, state and local health and sanitation regulations and department sanitation procedures as evidenced through local health department and third-party audits

+ Follows facility, department, and Company safety policies and procedures to include occurrence reporting

+ Requirement: Kitchen/production management and/or Sous Chef experience. Higher Ed experience a plus. High volume, complex foodservice operations experience and ServSafe certification are highly desirable. Institutional and batch cooking experiences. Must be experienced with computers, including Microsoft Office (Word, Excel and Power Point), Outlook, E-mail.

Job Summary

Summary: As a Sous Chef I, you are responsible for assisting with the overall success of the food program and overseeing culinary functions. The position entails assisting in all phases of planning, ordering, inventory, and food preparation. This includes adhering to the clients culture and guidelines, the Health Departments regulations, and the companys standards and expectations of food quality, freshness and presentation. The Sous Chef I also motivates, trains, develops, and directs the back of house associates preparing and cooking foods to accomplish the objectives of the operation to the satisfaction of the customers, clients, and management.

Essential Duties and Responsibilities:

+ Assists in coordinating and participating in the preparation and cooking of various food items.

+ Assists with planning and creating menus.

+ Rolls out new culinary programs in conjunction with the marketing and culinary team.

+ Assists with managing cost controls and controlling expenditure.

+ Performs other duties as assigned.

Qualifications:

+ 5 years of related culinary experience including 1 year at the management level.

+ Experience in restaurants, hotels, corporate dining, education, military, health care, and/or related food service operations.

+ Knowledge of food and industry trends with a focus on quality, production, sanitation, safety, food cost controls, and presentation.

+ Ability to set up and distribute production sheets.

+ Supervisory, leadership, training, management, and coaching skills.

+ ServSafe or Department of Health Certification is preferred.

+ Computer skills and knowledge of MS Office products including Excel.

+ Associates degree in Culinary Arts is preferred.
