About Us:
Backyard Bagel is a Seattle-based bagel shop and wholesale bakery with a cult following and a growing foot. We bake six days a week to serve a retail location, 20+ wholesale accounts, and seasonal farmers markets. Our bagels are slow-fermented, hand-rolled, and baked fresh daily.
Role Overview:
The Lead Baker plays a critical role in maintaining consistency, training new bakers, and ensuring our product meets Backyard Bagel standards every single day. You ll be the point person for shaping, proofing, baking, and quality control, working alongside our team of day and night bakers to keep production tight and efficient.
Key Responsibilities:
Production Oversight
Lead daily bake shifts, focusing on shaping, seeding, proofing, and baking
Ensure bagels meet quality and consistency standards (size, color, texture, bake)
Adjust timing and process as needed based on fermentation, dough temp, etc.
Troubleshoot and coach in real time
Training & SOPs
Train new bakers on shaping, baking, and finishing techniques
Reinforce and update SOPs as needed, keeping them relevant and effective
Provide ongoing feedback and support to day and night baking teams
Team & Communication
Coordinate with GM and Shop Lead on production schedules
Communicate key issues, shortages, or equipment needs
maintain a positive, efficient work environment across shifts
Quality Control
Conduct visual and hands-on QC of bagels throughout the day
Catch issues early and correct them before product goes to wholesale or retail
Maintain detailed awareness of how variations affect the final product
Requirements:
4+ years of professional baking experience, ideally in high-volume production
Strong knowledge of fermentation, shaping, and baking techniques
Comfortable training others and giving clear, constructive feedback
Reliable, efficient, and detail-oriented
Food handler s permit (or ability to get one before starting)
Ability to learn production software
