PURPOSE

To ensure the sanitation and cleanliness of all Snoqualmie Casino & Hotel kitchens and food preparation areas. Supervise all cleaning duties performed by the sanitation team.

SUPERVISORY SCOPE

  • None

ESSENTIAL DUTIES / RESPONSIBILITIES

  • Assist with oversight in all aspects of the stewarding team.
  • Ensure the cleanliness and sanitation of all kitchen areas to include: walk-in coolers, floors, walls, rolling equipment, small wares, china, glass and silverware.
  • Clean exterior of all kitchen exhaust hoods and the filters; and banquet equipment such as queen marries and hot boxes.
  • Perform bi-monthly deep cleans of each food preparation area to ensure total cleanliness and sanitation.
  • Ensure that all china, glass, silverware, ice glows, serving trays, etc. are organized and heated as necessary prior to all banquet functions, and to clean and return the same.
  • Assist Restaurant Managers, as needed, with updates of current levels of glasses, china and silverware.
  • Maintain an inventory of china, glassware and flatware.
  • Assist with updates to the SDS book, and make book readily available.
  • Assist with safety training on chemicals and equipment.
  • Ensure dilution ratios and dispensing units are kept in working order.
  • Communicate daily with the Executive Steward to provide an update regarding steward operations, including planning staffing requirements for banquet functions.
  • Other duties and responsibilities as assigned.
Requirements

Education and Experience:

  • High School Diploma / GED; Recognized Equivalent of a High School Diploma (RED) or Foreign High School Diploma (FHD).
  • Six (6) months kitchen experience in a Buffet Style Restaurant.

Skills and Abilities:

  • Proven working knowledge of Kitchen Design and the operation of grills, roast-and-hold ovens, conventional and convection ovens, fryers, etc.
  • Working knowledge of facilities design concerning fixtures and equipment

PREFERRED

Education and Experience:

  • One (1) year in a Management/Supervisory role.
  • Prior experience in mid to large-size food or janitorial operation.

Snoqualmie Casino & Hotel exercises Snoqualmie Tribal Member/Native American preference in hiring, in compliance with the Snoqualmie Tribal Employment Rights Ordinance (TERO). You must obtain and maintain a Gaming License from the Snoqualmie Gaming Commission. Pre-employment drug testing is required for all positions. The use of marijuana will not disqualify an applicant for positions in any department other than Transportation (Valet, Driver I). DOT panel testing is required for the Driver position.
