Basic Function: The Lead Bartender assists the Manager on Deck with all bar operations, ensuring all staff is properly trained and adhering to established policies, procedures, and standards, communicating successes and deficiencies to the Manager on Deck, as necessary. This role also assists the Manager on Deck with opening and closing procedures for the Staymaker restaurant, in general.

PRINCIPAL DUTIES:

  • Along with the duties indicated in the Bartender job description, assist the MOD in ensuring proper execution of assigned tasks, projects, and objectives for the Staymaker, Journeyman, and Silo bar locations, respectively.
  • Assist MOD with operational closing duties of the bar and restaurant, directing frontline staff, ensuring completion of closing, cleaning, and maintenance checklists, and inspecting completed work for quality and standards.
  • Assist managers in costing and pricing strategies.
  • Lead the Bar Research & Development (R&D) process for new menu rollouts.
  • Maintain a thorough knowledge of the bar and food menus, including any specials.
  • Lead training of all Bar positions, making recommendations to leadership regarding development and promotion opportunities.
  • Handle cash per established company policies and train Bartenders in cash handling processes.
  • Perform and direct Bar closing duties.
  • Assists restaurant MOD with restaurant opening and closing duties does not open or close restaurant independently.
  • Assists General Manager with writing and implementation of Standard Operating Procedures.
  • Ensure standards are met as pertain to matters of quality and safety, complying with all food and beverage regulations.
  • Participate with FOH Management in the completion of periodic performance evaluations.
  • Participate in pre-shift meetings, weekly team meetings, periodic team meetings, and monthly FOH all-staff meetings, as necessary.
  • Act as knowledge leader for Bar team with regards to use of department tools/technology, including point-of-sale (POS) software.
  • Conduct regular inventory of bar product and execute weekly plans for daily restock and preparation.
  • Participate in ordering supplies for bar operations.
  • Report nightly recap to all managers.
  • Monitor all bar equipment to ensure it is in proper working order, notify Facilities and Maintenance team if equipment needs to be serviced.
  • Ensure stock levels are at 100% of available product by managing closing personnel to achieve stocking standards.
  • Handle issues which arise with bar patrons or staff professionally, escalating to the MOD when necessary.
Requirements

PHYSICAL, MENTAL AND VISUAL SKILLS:

  • Must speak English fluently and be able to write in basic English.
  • Good organizational skills and verbal communication skills.

  • Ability to perform basic mathematical calculations, including calculations involving fractions, decimals, and percentages.
  • Ability to visually inspect food and beverage orders, read order forms and ensure that orders comply with the customers request.
  • Ability to stand for 6-8 hours.
  • Ability to perform moderate physical work; may be required to lift up to 50 pounds occasionally, up to 30 pounds frequently and up to 25 pounds of food trays carrying over their head constantly and performing such activities as bending, stooping, kneeling, crouching, climbing, reaching, standing, walking, pushing, pulling, lifting, and grasping for up to five hours without sitting.

EDUCATIONAL, DEVELOPMENT AND WORK-RELATED EXPERIENCE:

  • Thorough knowledge of food and beverage service preparation and operational procedures as would normally be acquired through a high school education and at least one year of relevant experience preferred.
  • Thorough knowledge of state liquor laws as applied to food and beverage service operational practices and procedures as would be acquired through and at least one year of relevant experience preferred in progressively responsible position.
  • Obtain/Maintain TIPS certification.
  • Proficiency with Microsoft Office 365 applications (Word, Excel, PowerPoint, Outlook).
  • Familiarity with an Entrepreneurial Operating System (EOS) a plus.

WORKING CONDITIONS:

  • Works primarily indoors in a bar and restaurant environment.
  • Potential exposure to sharp and rapid equipment movement hazards, sharp utensils, extremely hot stoves, grills and food and dangerous chemicals/solvents if proper safety procedures are not followed.
