JOB SUMMARY

Oversees the day-to-day culinary operations of the Pastry Kitchen. Will lead and develop all kitchen staff, ensure the highest quality food and service, and maintain acceptable food cost/labor cost in this established celebrity chef driven business. Plan, prep, set up and prepare quality products in all areas of the Pastry/Bake Shop to include, but not limited to breakfast pastries, breads, doughs, ice cream, sorbets, creams, syrups, jams, display/centerpieces, cakes, amenities, truffles, garnishes, cookies, petit fours, coffee cookies, dessert specials and pralines, in accordance with departmental quality standards and specifications. Maintain organization, cleanliness, and sanitation of work areas and equipment. Valid driver's license may be required with at least one year of clean driving history

Salary range is $78,300 - $90,000

CANDIDATE PROFILE

Education and Experience

  • High school diploma or equivalent. Must communicate in the English language (written and oral) to the understanding of customers, guests, and co-workers.
  • 5 years experience as an executive pastry chef in a luxury style hotel/resort or restaurant.
  • Post-secondary education for the Culinary Arts within an accredited school.

CORE WORK ACTIVITIES

  • Should have working experience in a professional kitchen and be able to lead/teach a team of sous chefs and cooks to strive for the highest standards.
  • Should lead by example on a daily basis and be in the trenches next to your team while displaying a very strong work ethic.
  • Should understand restaurant financials (sales, costs, labor, etc.) and possess a creative approach to problem solving.
  • Will collaborate with team to create and promote culture and restaurant work environment based upon respect; fosters opportunities for team to learn, grow, and develop their abilities.
  • Truly believe in a guest first mentality and always strive to say yes to guest requests.
  • Understanding of all current health department regulations is mandatory. Possess the highest standards of cleanliness and safety.
  • Overall performance of the pastry kitchen as a whole.
  • Upholding all standards of quality, flavor, and concept of Pastry Shop.
  • Proficiency at all levels in the kitchen including recipe execution, quality standards, sanitation practices, and kitchen management functions.
  • Meet financial targets and goals with all kitchens related costs and expenses.
  • Must be able to lift/carry up to 50 lbs.
