We are looking for a Pastry Sous Chef to join the re-opening of the famed Delano Miami Beach.
Set to open its doors in 2025, Delano Miami Beach will fuse historic charm with contemporary luxury, reflecting a reimagined experience that pays homage to the original visionary concept. Comprising 170 rooms and distinct food and beverage concepts, the hotel will preserve its iconic walk-in pool and, in addition, unveil a new pool on an amenity deck, offering breathtaking views of the ocean. Delano Miami Beach will act as the brand's flagship location, re-establishing Delano as a trailblazer in luxury lifestyle hospitality. Ennismore, in partnership with Cain International (the owners of Delano Miami Beach as well as partner in the Delano brand), are currently undertaking a significant renovation and redevelopment of the iconic Delano hotel with an aim to open its doors again ahead of the 2025 winter high season.
Job Description
- Assist the Executive Pastry Chef in leading and managing all pastry and bakery operations across the hotel, including daily production, team supervision, and quality assurance.
- Support the execution of innovative menus that reflect the property's culinary vision and enhance the guest experience.
- Supervise, train, and mentor the pastry team to ensure high levels of technical skill, creativity, and adherence to quality standards.
- Maintain consistency in taste, texture, and presentation of all pastry and baked items across all outlets
- Assist in payroll processing and staff recruitment for the pastry department, including onboarding and scheduling support.
- Support vendor relations, including procurement of pastry ingredients and supplies, order placement, and inventory coordination.
- Ensure full compliance with food safety, hygiene, and sanitation regulations in accordance with local laws and hotel policies.
- Assist in managing food and labor costs through effective scheduling, recipe standardization, portion control, and inventory management.
- Produce custom, high-quality cakes, chocolate showpieces, and plated desserts for VIPs, weddings, and special events.
- Monitor inventory and order supplies as needed, ensuring proper storage, minimizing waste, and maintaining ingredient freshness.
- Oversee the care, cleanliness, and maintenance of all pastry kitchen equipment and tools.
- Foster a positive, collaborative, and disciplined work environment, supporting a culture of excellence and continuous improvement within the pastry team.
- We recognize we are in the hospitality industry and that may require us to provide lateral service.
- We will on occasion call for each individual in the team to, on a routine basis perform various related tasks as needed in the spirit of providing exceptional service
Qualifications
- Bachelor's degree in Culinary Arts or a related field preferred; high school diploma or equivalent required.
- Minimum of three years in a supervisory pastry role, ideally at the Pastry Chef level, within an upscale restaurant or lifestyle hotel environment.
- Must be at least 21 years of age.
- Must possess or be able to obtain all required work cards or certifications.
- Demonstrated leadership abilities with a proven ability to mentor, motivate, and manage a diverse culinary team.
- Excellent organizational and time management skills, with the ability to meet deadlines and perform well under pressure.
- Ability to thrive in a fast-paced, guest-focused, and high-volume environment.
- Current hands-on experience in a professional hospitality kitchen required.
- Proven track record of embodying company values and maintaining a high level of energy, professionalism, and integrity.
- Intermediate to advanced computer skills preferred, including familiarity with Opera, GoConcierge, HotSOS, Microsoft Word, Excel, and Outlook.
- Ability to efficiently enter and retrieve work-related data using computer systems and/or point-of-sale (POS) platforms.
- Comfortable spending extended periods working on or viewing computer screens.
