Summary: The F&B Manager is responsible for overseeing the daily operations of the Food & Beverage department, ensuring exceptional service, high-quality dining experiences, and smooth day-to-day functions across all outlets. This role also focuses on driving comparable sales growth, maintaining profitability, fostering a culture of Genuine Service, and promoting positive Team Member relations.
ESSENTIAL DUTIES AND RESPONSIBILITIES - Other duties as assigned:
- Overseeing all aspects of food and beverage operations, including the restaurant, bar, banquets, or marketing events.
- Schedule and manage all F&B staff, providing training, support, and performance evaluations to maintain service standards.
- Ensuring that the F&B Outlets are functional and meet all standards to include, but not limited to, cleanliness, service, employee interaction and execution of food.
- Completing accurate and necessary daily, weekly, and monthly paperwork and administrative duties to include but not limited to the hiring process, training process, sales tracking, labor tracking, payroll, deposits, inventories, ordering, and P&L accounting as assigned.
- Ability to utilize basic functions and programming of the POS register system.
- Ensuring the safe operation of equipment and working conditions to prevent hazards and accidents.
- Ensure compliance with health, safety, and sanitation regulations, maintaining a clean and safe work environment.
- Monitor inventory levels, order supplies, and ensure cost-effective operations without compromising quality.
- Coordinate with the kitchen team to ensure timely and accurate food delivery.
- Address customer inquiries and concerns, resolving any issues promptly.
- Assist with inventory, budgeting, forecasting, and financial performance analysis for the department, ensuring profitability and cost control.
- Collaborate with other departments to support events, promotions, and activities that involve food and beverage services.
- Administer and enforce internal cash controls and procedures.
- Uphold standard operating policies (SOPs), Minimum Internal Control Standards (MICS), and Missouri Gaming Commission Rules and Regulations, ensuring all F&B team members adhere to them.
- Must be able to work flexible hours, including nights, weekends, and holidays as needed.
- Must be 21 years of age or older.
SUPERVISORY RESPONSIBILITIES
Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.
QUALIFICATIONS

EDUCATION and/or EXPERIENCE
- High school diploma or equivalent required; Bachelor's degree in Hospitality Management or a related field is a plus.
- Previous experience in food and beverage management, preferably in a hospitality environment.
CERTIFICATES, LICENSES, REGISTRATIONS
- Must be able to obtain and maintain a Missouri Gaming Commission Level II License.
- Must have a valid Driver License.
SKILLS
- Must be able to effectively communicate in English.
- Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.
- Must have Microsoft Office experience and basic computer skills.
- Excellent communication and interpersonal skills, with a customer-focused attitude.
- Strong problem-solving skills and the ability to thrive in a fast-paced environment.
- Proficiency in Microsoft Office and F&B management software is preferred.
- Ability to utilize basic functions and programming of registers.
