The anticipated relaunch of Cicchetti ising soon! We are in search of a chef de cuisine to oversee the daily operation of the kitchen. Opened in 2009, Cicchetti operates as the sister restaurant to Serafina in the Eastlake neighborhood. Our food takes inspiration from all over Mediterranean and ambiance from a traditional Venetian Cicchetteria with views of lake union and the Seattle skyline from the mezzanine. Job Summary :
The chef de cuisine will work closely with the executive chef, CDC, and sous chefs to manage all aspects of the kitchen operations. This is a salaried 50 hour a week position with creative freedom of the menu. Responsibilities include, but are not limited to, scheduling, ordering, monthly inventory, COGS control, menu production, daily specials, kitchen cleanliness, and productpoundanization.
Compensation:
Base pay range $70K-80K
Quarterly bonus
2 weeks (80 hours) paid vacation, eligible after 90-day probationary period
Seattle sick & safe PTO as accrued
Medical, dental, vision, eligible after 60-day probationary period. Premiums paid at 75%
In house spending account for dining at both locations
Opportunity for in house growth and advancement
Totalpensation package valued at $95k annually
Executive sous chef qualifications :
Minimum 3 years experience in high volume fine dining BOH management
Ability to take and give direction on various tasks and execute tasks efficiently and timely
Culinary degree preferred but not required
Experience and a proven track record in cost control, inventory management, ordering, local sourcing, and staffing are requirements for this position
Punctual and professional with the desire to hold co-workers to the same standard
A firm grasp of traditional Mediterranean cooking techniques and excellent knife skills
Ability to perform under pressure in high volume situations
Extensive product knowledge in relation to seasonality
Strongmunication skills are a required
Experience with regional Italian and Mediterranean food is a huge plus. We seek dedicated, passionate, food-minded professionals to round out our team of devoted cooks and chefs.
