SanKai - Ryuichi Nakano's Premier sushi bar in Downtown Edmonds

Sushi master Ryuichi Nakano casts a wide net at SanKai, drawing longtime fans and weing neers to his intimate new sushi restaurant in the heart of downtown Edmonds. A coveted seat at Nakano's sushi bar has been a home-away-from-home for Seattle sushi lovers for more than a quarter century. First, at I Love Sushi on South Lake Union w Nakano-San honed his craft for a decade and later at Kisaku, his own critically acclaimed Green Lake neighborhood restaurant, sold in 2018.

SanKai (translation: mountain/sea) provides a fresh vision for Nakano. He continues to celebrate the Japanese culinary art the Pacific Northwest has long embraced, right w the Olympic Mountains stand as backdrop to the Salish Sea. A native of Takayama in the Japan Alps and a longstanding Shoreline, WA resident, Nakano works with his wife, Yuka, and their son, Toru. POSITION SUMMARY:

Take orders, prepare, and serve alcoholic and non-alcoholic beverages and meals to guests courteously, enthusiastically, and efficiently according to established service standards and specifications.

Maintain stock/supplies and cleanliness of outlet and equipment.

Ad to safety practices and procedures.

ESSENTIAL FUNCTIONS:

Knowledge Base

Know particular characteristics and descriptions of every wine by the glass and major wine on the wine list.

Know all liquor brands, wines, beers, and non-alcoholic selections available.

Know table numbers, room capacity, hours of operation, menus, prices, and dress code of assigned outlet.

Recognize proper glassware and garnishes for each drink.

Maintainplete knowledge of, and strictly abide by, state liquor regulations, particularly those prohibiting service to minors, intoxicated persons, and drunk drivers.

Maintainplete knowledge of, andply with, all departmental policies and service procedures.

Ad to all Health Department, sanitation, and safety regulations as required by the restaurant.

Use all chemicals in accordance with OSHA regulations and restaurant requirement

QUALIFICATIONS:

To perform this job successfully, an individual must be able to perform each essential function from the list above satisfactorily.

EXPERIENCE, EDUCATION, AND CERTIFICATIONS:

Education Level: High school graduate, some college

Experience Level: Three years experience as a Bartender or Bar Back.

Required: Ability to obtain a Washington State Food Handlers Certification.

Ability to obtain a Washington State MAST/alcohol education certificate.

Ability to obtain Class 12 MAST Permit for alcoholic beverage program management (management positions only).

Minimum 21 years of age to serve alcoholic beverages.

Preferred:

Knowledge of Computerized P.O.S. Systems and MS Office programs.

Food Safety Certification.

Certification in alcohol awareness program.

Certification of previous training in liquor, wine, and food service.

Certification in C.P.R.

Customer service training.

Ability tomunicate in a second language.

ESSENTIAL PHYSICAL REQUIREMENTS:

The physical requirements listed are representative of those that must be met by an employee to successfully perform the essential functions and key responsibilities of this position. Work conditions in certain areas of the restaurant can be hot, cold, wet, slippery and/or noisy.

Frequent walking (up to 12 hours), including climbing up and down stairs is required. Ability to sit, stand, walk, climb stairs, bend, lift, twist, kneel, crouch, crawl, pull, push, carry, grasp, reach and stoop as needed, sometimes for extended periods, and to occasionally lift and carry heavy items up to 50 pounds (maybe aided).

If office work is required, it involves remaining in a stationary position most of the time in front of a puter, using a keyboard, mouse, and telephone. Regularly operate aputer and other office equipment. Occasionally move about the work site to access file cabinets, office equipment, etc. Exert up to 10 lbs of force occasionally, and/or a negligible amount of force frequently or regularly move objects. Communicate and exchange information with colleagues, clients, and other individuals in person and electronically. Home/remote work, if applicable and as needed, is to be approved by the supervisor.

Availability required for extended and various work hours, including nights and weekends.
