We are seeking a dedicated and skilled Line/Prep Cook to join our team full-time. This role is crucial in preparing and cooking meals that reflect our commitment to using local and seasonal ingredients, promoting nutrition for academic and athletic performance, and practicing sustainability in our culinary operations. We are seeking candidates with excellent communication and multi-tasking skills to play a key role in ensuring customer satisfaction.

Duties and Responsibilities:

  • Completing all tasks, in order, on the prep list from the Executive Chef or Sous Chef
  • Oversee and help train line cooks on the set up and stocking stations with all necessary supplies
  • Answer, report and follow and help train line cooks on all operational instructions
  • Ensure food safety and sanitation standards are met at all times; help disseminate food safety standards to part-time line cooks, full- time line cooks, and student employees
  • Prepare and cook meals according to established recipes and standards (e.g. chopping vegetables, butchering meat, preparing sauces, and all menu items)
  • Ensure that food comes out simultaneously, in high quality, and in a timely manner
  • Contribute to the maintenance of a sustainable kitchen environment by minimizing waste and practicing eco-friendly cooking methods
  • Labeling and stocking all ingredients on easily accessible shelves using FIFO method
  • Measuring quantities of seasonings and other cooking ingredients
  • Clean up station and kitchen daily
  • Stock inventory appropriately
  • Maintain a positive and professional approach with coworkers and customers
  • Inspect workstations to identify and address approaching expiration or overstocked ingredients to ensure product quality and inventory efficiency
  • Additional Responsibilities: perform other duties as assigned to support departmental goals and business needs

This position may include responsibilities with the Facilities Department or Prescott Pines Camp during the summer months. Candidates should be prepared to support seasonal operations as needed. See below for specific qualifications and additional duties related to these assignments.

Grounds Duties:

  • Curb painting
  • Grounds clean up and trash removal
  • Trail maintenance
  • Other grounds duties

Custodial Duties:

  • Window washing
  • Carpet cleaning/shampooing
  • Event set up
  • Room turning at the Halls
  • General cleaning tasks

Additional responsibilities

  • Help with setups when needed
  • Properly vacuum carpet and dust mop and wet mop hard floors
  • Ability to keep bathrooms clean and sanitized and stocked
  • Identifies issues with buildings and equipment and requests work orders
  • Aptitude to learn new tasks quickly
  • Work after hours and weekends to cover shows at the Performing Arts Center, special events and projects
  • Ability to perform the safe operation of vehicles, equipment, and tools
  • Accuracy and attention to detail regarding work orders and timekeeping

Minimum Expectations & Requirements
  • Proven experience as a Line Cook in a fast-paced kitchen environment
  • Knowledge of local and seasonal ingredients and their culinary applications
  • Knowledge of dietary restrictions, food allergies, and safe food handling practices to accommodate diverse nutritional needs.
  • Ability to work well in a team and communicate effectively with colleagues
  • Excellent understanding of various cooking methods, ingredients, equipment and procedures
  • High school Diploma or GED or Currently Enrolled
  • Current Arizona Food Handlers Card
  • Accuracy and speed in executing assigned tasks
  • Familiar with industry's best practices
  • Ability to follow work direction and work as a part of a team
  • Ability to adapt to workplace and workload changes
  • Regular attendance is an essential job function as it demonstrates dependability towards the performance of job duties
  • Ability to communicate effectively with peers and managers in person, by phone and email
  • Ability to work in an environment which promotes teamwork and strong work ethics
