About Whitten Regional Center
Whitten Regional Center is an Intermediate Care Facility for Individuals with Intellectual Disabilities (ICF-IID) of the South Carolina Department of Behavioral Health and Developmental Disabilities (BHDD), Office of Intellectual and Developmental Disabilities (OIDD) located in Clinton, SC serving residents with intellectual and developmental disabilities.

Job Responsibilities
Under general supervision, this position performs a variety of duties involved in preparing and serving individual meals. We emphasize consumers receiving proper diet and consistency. This position also checks food temperatures, cleans equipment, and assists in maintaining sanitation throughout the process.
  • Prepares trays from serving line placing correct diet and correct portion size on tray. Monitors temperatures, appearance of food, and trays for accuracy. Cleans and calibrates thermometers. Fills sanitizer and wash buckets. Checks and documents sanitizer concentration. Takes dirty pans and scoops to the dish room, and empties trash.
  • Retrieves used carts at off loading area, from delivery crew. Empties and clean carts, and equipment Cleans and maintains sanitation of tray line, dish room, preparation, coolers and other areas of food service. Cleans I sanitizes utensils, pans, racks and carts. Cleans dishwasher. Completes all assigned duties before end of shift Assists in all areas of Food service as needed.
  • Stocks tray line and counts out items for use. Rotates stock ensuring (FIFO) first in, first out. Checks labels of food items. Monitors for out of date items. Sets up work station in a timely manner. Restocks items between meals. Ensures no damaged products are present.
  • Cleans and maintains sanitation of tray line, dish room, clean dish room, coolers and other areas as assigned. Cleans and sanitizes ice machine, and ice tables.
  • Works in preparation room to prepare food for consumers. Bags milk and snacks as needed.
  • Cross trains to have the ability to work all areas of tray line, as directed.
  • Works in all areas of Food Service as assigned. Completes all assigned duties by end of shift. Ensures hygiene and sanitation according to DPH regulations, SC state and facility policies, and Food Service Department rules. Monitors incoming calls. Makes diet changes as necessary.
  • Conducts residential, food service, and facility food storage area inspections as assigned.
  • Completes attendance sheets daily. Maintain break times, in accordance with departmental rules.
  • Maintains a positive attitude, and actively engages in team work.

A High School Diploma or GED and experience in quantity and quality cooking, or an equivalent combination of education and experience. Knowledge of the procurement, storage, preparation, distribution and serving of food products. Knowledge of dietetic principles involved in planning and reviewing menus for nutritional adequacy, dietary balance and attractiveness of prepared food products. Knowledge of the methods, materials and appliances used in Food Service. Ability to teach food preparation and cooking. Ability to maintain food service records and prepare written reports. Acquires and maintains Serv-Safe, Defensive Driving, and CPR Certifications.
