ESSENTIAL JOB FUNCTIONS:
- Responsible for directing, training and development of all Kitchen Utility staff and the distribution of workload necessary to maintain the cleanliness of all kitchen equipment, China, silver, glassware, pots, pans in work areas and replenishment of supplies with clean ware on their assigned shift.
- Must ensure proper training of all Kitchen Utility staff on assigned shift in the use of chemicals and sanitary handling of all Food and Beverage equipment and utensils.
- Assigns duties as provided by Executive Steward.
- Monitor, observe and assist in evaluating team member performance.
- Supervise cleaning of work area and physical surroundings.
- Supervises team members ability to follow safety and security policies to prevent accidents and control costs.
- Enforces proper cleaning routines for service ware, equipment, floors, etc.
- Enforces proper use and cleaning of all dish room machinery.
- Ensures all food holding and transport equipment is in working order.
- Ensures compliance with all applicable laws and regulations.
- Ensures compliance with food handling and sanitation standards.
- Any other reasonable duties as required by management.
- Ability to work flexible schedules including holidays and weekends and able to perform multiple tasks.
- Ability to uphold and demonstrate the highest level of integrity in all situations and recognize standards required by a regulated business.
- Must be able to obtain a required Non-Gaming License.
EDUCATION and/or EXPERIENCE:
- High school diploma or equivalent required.
- Some college preferred.
- Supervisory, communication and organizational skills.
- Two years experience in supervisory position in the Hospitality Industry or related field, with direct supervision of employees and experience in scheduling labor and maintaining inventories.
PHYSICAL, MENTAL AND ENVIRONMENTAL DEMANDS:
- Is able to work in smoke filled environment and stand for prolonged periods of time.
- Physically mobile with reasonable accommodations including the ability to lift up to 50 lbs., and the ability to push, pull, reach, bend, twist, stoop and stack.
- Excellent oral and written communication skills.
- Must present a well-groomed appearance.
- Must be able to respond calmly and make rational decisions when required.
- Must be able to listen and respond to visual and aural cues.
- Must be able to tolerate areas containing varying noise and temperature levels, illumination, vibration, crowds, and air quality.
