Job Summary
Prep Cooks
This is a non-exempt full-time position that reports to the Chef de Cusine and Sous Chef. Prep Cooks will assist in the preparation of all bulk restaurant foods including cleaning and cooking of vegetables, preparing sauces, grains, aromatics, and meat and seafood. Prep cooks are responsible for receiving andanizing food deliveries with proper FIFO and maintaining theanization of the walk-in, dry goods areas, and dishwashing area. Must have strong multitasking andanizational skills as well as a good understanding of ingredients, kitchen safety and hygiene. Must follow recipes well. Prep cooks will assist the Steward with daily, continuous cleaning of the kitchen as well as nightly breakdown. Prep cooks are asked to take pride in their food, effort, and cleanliness as it is their responsibility.
Job Responsibilities
* Presents a positive image by having good body language, personal hygiene and professional appearance, follows the dress code
* Attends department meetings and trainings
* Assists with stocking and setting up the kitchen stations
* Prepares food including cleaning and cutting the ingredients and cooking main dishes, desserts, appetizers, and snacks
* Plates prepared foods based on restaurant specifications
* Washes, chops and sorts ingredients like fruits, vegetables and meats
* Measures quantities of seasonings and other cooking ingredients
* Par cooking food, reducing sauces, and starting first steps in various dishes
* Washes and cleans cooking utensils and cookware, takes outpost, recycling and debris
* Works with servers to ensure that orders arepleted according to request and on time
* Cleans and washes the kitchen and cooking utensils
* Stores equipment at the end of shift
* Ensures that the kitchen operation procedures and hygiene meet food safety standards and regulations
Safety and Cleaning
* Washes hands and wears personal protective equipment whenever necessary
* Safely stores all service ware and ensure cleanliness
* Safely handles food and beverage to avoid any cross-contamination
* Ensures that the station assigned is clean inside, out, top, bottom, under, over, above, around, and below
* Always maintains utmost restaurant cleanliness
* Complies with all sanitation, recycling, andpost procedures and ensures that the teammates are doing the same
* Never walks away from an uanized station
Physical Demands
* Consistently required to stand, walk, bend, squat, reach, grasp, twist and turn, talk, listen, and hear. Consistent fine finger manipulations and repetitive motions with hands and feet
* Occasionally required to stoop and climb ladders or stepstools
* As needed, position requires sitting, crawling, and climbing stairs
* Consistently required to lift up to 50 pounds without assistance. Occasionally required to lift up to 100 lbs. with assistance
* Work performed requires medium physical strength
* Consistently required to use near and peripheral vision, in addition to depth perception
Essential Functions*

Schedule Demands
* Required to work weekends and holidays
* Occasionally required to work up to 12 hours
* During busy seasons, time off requests are amodated on a firste first serve basis
