Banger's is looking for experienced Live Fire Cooks to help run daily operations:
The live fire cook position at Banger's requires experience with live fire cooking. Spit-roasting, Santa Maria grills, open pit BBQ, smoking sausages, bacon, turkeys, and pork butts are all in a day's work for this position. Banger's is growing rapidly and we are looking for tenacious, accurate, respectful, and confident individuals who enjoy problem-solving in a faced paced environment. Our restaurant operates with a team mentality w both front and back-of-house staff work together to help our operations run smoothly in alignment with our core values. Located in the heart of Rainey Street, Banger's is a high-volume restaurant dedicated to serving the masses but still doing the little things well. With the largest draft system in the state of Texas and one of the premier beer programs in the country, Banger's loves craft beer. With a meat processing facility cranking out over 2,000 lbs of sausage every week and a freestanding smokehouse fully dedicated to fire and elemental cooking, Banger's loves meat! And with over 500 seats, a bar that fits over 700, and an overall facility that allows us to amodate private parties of up to 1,800 people Banger's loves to serve. Second of all, you need to be able to do the job. Here is a basic breakdown of what the job entails:
At Banger's, a line cook's primary job is executing the operation, maintenance, and cleanliness of his or her assigned station. He or she is the muscle of the kitchen, manning stations daily andpleting service through their own initiative and under the direct supervision of the Lead Line Cook, Sous Chef or Chef de Cuisine. This is the foundational position of any culinary career, the place w you will cultivate proficiency in cooking methods, multitasking, working in a brigade, and setting the tone for your career to follow.
In the execution of those primary marching orders, a cook may be called upon to do any number of, but not limited to, the following tasks:
Execute one or all of the primary moist cooking methods; boiling, stewing, shallow frying, deep frying, barbequing or basting, or one or all of the primary dry cooking methods; baking, grilling, roasting, or smoking within the operation of a station or otherwise
To be the last line of defense ensuring the readiness of his or her assigned station, and the first line ofmunication related to the readiness of the station for service
To assemble all necessary mise en place from prepared items, or prepare mise en place forpetent execution of service on a given station
To alert an onsite culinary manager, sous chef, or chef immediately if you cannot execute the three core directives above for any reason
To take personal pride and responsibility for the cleanliness and operational readiness of your assigned station
To execute directives and tasks as assigned by the lead line cook, sous chef, chef de cuisine, or executive chef
To always maintain a state ofanized readiness and cleanliness in the walk-in and storage areas
To help your fellow cooks when they need it, to bail out a fellow line cook that is in the weeds, to cover for your fellow cook when they are sick, and have their backs, so they protect you in the same way when you need it
To never say That s not my job.
