Iconic Portland Breakfast Restaurant Seeks a Lead Chef
Cadillac Cafe, one of Portland s most iconic and celebrated breakfast restaurants seeks an experienced and dedicated Lead Chef to help us continue our success.
As Lead Chef you will report directly to the General Manager. All back of house operations will be your attention and accountability. The Lead Chef will actively direct the team by working on the line approximately 80% of the time, with 20% of their week directed towards the management of the kitchen and team.
Primary Responsibilities
Ordering - Maintain proper par of consumable and non-consumable. Adjust according to business level. Build rapport with vendors, ensuring quality of goods and services.
Food Preparation - ensures proper food preparation requirements are aplished in a cost-effective manner. Actively trains co-workers directly on the line.
Quality Control - consistently delivers food that has correct presentation, portion, temperature and procedure.
Schedule - accurately forecasts BOH staffing requirements such that staffing levels are appropriate to revenue levels while maintaining excellent service.
Talent acquisition and retention - Conduct interviews, and reviews of all BOH employees
Supervision - oversee BOH staff ensuring productivity, safety and teamwork.
Sales Analysis - Works with the General Manager to review information contained within the POS to ensure popular food items remain on the menu and unpopular food items are replaced or re-engineered to stimulate sales
Menu Design - Works with the General Manager to consistently create new food items that reflect changing trends such as seasonality, special events, new products, new market ideas, daily specials etc.
Facility Maintenance and Sanitation - Guarantees a sanitary, safe, stocked,anized and presentable kitchen.
Compliance - ads to Multnomah County Health requirements with regard to sanitation, labeling of product and proper storage with score of 95 or better.
Cost Control
Inventory - Takes monthly inventory, orders product to ensure menu items are available.
Food Waste - Incorporate cross-utilization of food items in order to minimize food waste
Budgets - Works with the General Manager to stay within budget parameters on all food items required to deliver the menu. Obtains approval prior to making anymitments beyond set budgets.
Food COGS - Ensures COGS are maintained at appropriate levels relative to sales.
Labor Hours - maintains labor hours at target levels relative to sales by managing on a hourly/daily basis.
Training and Leadership
Talent acquisition and retention - Conduct interviews, perform periodic reviews of all BOH employees
Staff Meetings - plans and facilitates staff meetings covering topics including safety, new menu items, sanitation, proper portions, proper presentation, and food temperature
Motivate BOH staff - provides coaching, guidance, and incentives to BOH staff members to ensure consistent and timely delivery of high-quality food.
Role Model - leads by example through strong work ethic, appropriate attire, attention to detail, quality control, fair and consistent treatment to both customers and staff.
Physical & Complementary Skills Requirements
Ability to stand for extended periods of time while working the line
Ability to lift and carry up to 50 pounds
Ability to reach, bend, stoop, and climb stairs
Manual dexterity in using kitchen equipment and tools
Ability to work in a hot, noisy, and fast-paced environment
Ability to work the line as needed and or during busy shifts
Working knowledge of Word, Excel, and Outlook
