Fuel Events With Culinary Excellence
This is a pivotal leadership role for a hospitality-driven chef ready to elevate Grand Casinos banquet experience across two dynamic properties. As the Banquet Sous Chef, youll lead the culinary execution of high-profile events and banquets, guiding a team of cooks and servers while ensuring every plate is memorable. What Youll Do
- Lead Banquet Culinary Operations: Direct and oversee all food preparation and presentation for banquets and large-scale events.
- Deliver on Guest Experience: Ensure every event dish reflects excellencehot, fresh, on time, and beautifully executed per event specs.
- Mentor a High-Performing Team: Supervise, train, and coach culinary staff in banquet production and kitchen hygiene.
- Drive Operational Efficiency: Monitor food quality, costs, and labor to maintain budget alignment while upholding Grand Casinos elevated standards.
- Collaborate for Impact: Partner with Events, FOH, and executive teams to ensure seamless service, resolve real-time challenges, and meet client needs.
- Lead with Standards: Ensure full compliance with health, safety, and sanitation requirements, including gaming and tribal regulations.

What You Bring
- 5+ years of banquet/catering culinary experience with 3+ years of leadership
- Track record of high-volume kitchen execution, preferably in hospitality or events
- Experience with food costing, event planning, and kitchen systems
- Serv-Safe and Alcohol Awareness certifications (or commitment to earn within 6 months)
- Strong organizational and communication skills, with a calm-under-pressure style
- Ability to lift 30 lbs. and move in a fast-paced, physically demanding kitchen environment
- Must be able to secure license from Gaming Regulatory Authority (GRA)
- Responsible for following all relevant Detailed Gaming Regulations (DGRs)
- Mille Lacs Band Member and American Indian preference will be exercised in the hiring process.
Physical Requirements and Work Environment
- Flexibility to work evenings, weekends, and holidays as required by Guest needs or event schedules.
- Will involve standing/walking for extended periods and lifting during events.
