Job Description

Located at the luxurious Four Seasons Resort Maui at Wailea, Spago offers panoramic ocean views, a world-class team, and an elevated fine dining experience rooted in seasonal, local ingredients and global technique.
We are currently seeking a Pastry Chef to lead our pastry program with creativity, precision, and passion. This is a unique opportunity to work in one of the most breathtaking fine dining destinations in the world, as part of an internationally renowned culinary brand.
Key Responsibilities:Lead daily pastry operations, including dessert production, plating, bread program, and specialty items.
Design and execute a seasonal dessert menu that reflects the Wolfgang Puck style while incorporating local Hawaiian ingredients and influences.
Oversee and mentor pastry team, ensuring high performance, consistency, and innovation.
Maintain excellent product quality and presentation standards aligned with Spagos fine dining service.
Collaborate closely with the Executive Chef and FOH team to create a cohesive guest experience.
Ensure cleanliness, safety, and compliance with all food and health regulations.
Manage pastry inventory, ordering, and cost control.
35 years of experience as a Pastry Chef or Pastry Sous Chef in a fine dining or luxury resort setting.
Strong leadership and communication skills with the ability to inspire and train others.
Deep knowledge of plated desserts, pastry fundamentals, breads, and modern techniques.
Creativity and a strong eye for detail and presentation.
Culinary degree or formal pastry training preferred.
Must be organized, self-motivated, and able to thrive in a fast-paced, high-volume kitchen.
