Position Summary
The Food & Beverage Manager oversees the daily operations of Hotel Viata's restaurant, bar, in-room dining, and banquet outlets, ensuring the highest standards of service, quality, and hospitality are consistently delivered. This role is responsible for leading and developing a team, managing operational budgets, maintaining compliance with health and safety regulations, and creating memorable culinary and beverage experiences for our guests.
Key Responsibilities
Operational Excellence
- Direct and supervise daily operations for all F&B outlets, including restaurant, lounge, pool bar, in-room dining, and banquets.
- Ensure service standards, cleanliness, and presentation meet or exceed Hotel Viata and Pacific Hospitality Group brand expectations.
- Monitor dining areas, resolve guest concerns promptly, and ensure service recovery is handled with professionalism and care.
- Collaborate with the culinary team to develop menus, specials, and seasonal offerings that align with guest preferences and brand identity.
- Maintain accurate inventory controls, manage ordering processes, and minimize waste.
Leadership & Team Development
- Recruit, hire, train, and coach F&B supervisors and team members.
- Foster a positive work environment that promotes teamwork, accountability, and professional growth.
- Conduct regular pre-shift meetings and ongoing training sessions to reinforce service rituals and guest engagement standards.
- Recognize and reward outstanding performance; address performance issues promptly and constructively.
Financial & Administrative
- Monitor and manage department budgets, including labor, food cost, and beverage cost, to achieve financial targets.
- Analyze sales reports and implement strategies to drive revenue, upsell offerings, and improve profitability.
- Oversee scheduling to balance labor efficiency with service excellence.
- Ensure all invoices are coded, approved, and submitted accurately and on time.
Compliance & Safety
- Maintain compliance with all local, state, and federal health, safety, and liquor regulations.
- Enforce responsible alcohol service policies in accordance with TABC standards.
- Ensure staff certifications (TABC, Food Handler) remain current.
Guest Experience
- Proactively engage with guests to anticipate needs, personalize experiences, and encourage repeat visits.
- Partner with Sales & Events teams to execute flawless banquet and catering events, ensuring smooth communication and exceptional service.
Qualifications
- 3+ years of progressive leadership experience in Food & Beverage management, preferably in a luxury or upscale hotel environment.
- Strong knowledge of restaurant, bar, and banquet operations.
- Proven track record in driving guest satisfaction, revenue growth, and operational efficiency.
- Excellent leadership, communication, and problem-solving skills.
- Proficiency in POS systems, inventory control, and Microsoft Office Suite.
- Valid TABC and Food Handler certifications (or ability to obtain prior to start).
- Flexible schedule, including evenings, weekends, and holidays.
