Position Summary:
As Dining Room Captain at Keeneland Hospitality, you are responsible for facilitating a seamless and exceptional dining experience by coordinating front of house service operations. This position acts as the liaison between guests, servers, and kitchen staff, while also overseeing service standards, managing table assignments, and providing leadership during service. The Captain plays a key role in ensuring guest satisfaction and team efficiency.
Key Responsibilities:
- Responsible for all front of house positions.
- Day prior: retrieve reservations sheet from the ticket office.
- Day of: confirm and retrieve any reservation changes from the ticket office for that day.
- Coordinate comps with supervisor and collect information from the main office.
- Compare reservations to room chart to ensure proper staffing, communicating staffing needs to supervisor.
- Contact ticket office if there is any confusion regarding a reservation.
- Direct and support team members, ensuring they remain on task, and with awareness to the happenings within the room including the flow of service.
- Perform pre-shift meetings with the entire team reviewing relevant information addressing any prior issues.
- Delegate to the assistant captain; ensuring the dining room is set and ready to open on time.
- Ensures that all team members adhere to approved uniform and dress code guidelines.
- Coordinate with kitchen and bar for timeliness, order accuracy, proper set up and delivery of food and beverage items.
- Address and resolve guest concerns or complaints with poise and professionalism.
- Ensure compliance with Keeneland Hospitality policies, sanitation standards, and safety regulations
Qualifications and Requirements:
- 2+ years of experience in upscale or fine dining service, with leadership experience preferred.
- Excellent communication and interpersonal skills.
- Strong attention to detail and commitment to guest satisfaction.
- Ability to lead by example, support and motivate a team.
- Familiarity with the micros POS system and basic math skills.
- Beverage and bar knowledge.
- Able to multitask and work efficiently under pressure in a high volume environment.
- Ability to carry a tray, lift up to 25lbs, and assist other FOH positions when needed
Licensing Requirements:
- A valid Fayette County Food Handler’s License is required for all food and beverage staff. Must be obtained prior to the first scheduled shift.
- A Kentucky Horse Racing Commission license is required for all track workers. This license will be provided to you on behalf of Keeneland upon hire.
