BLACKBARN Restaurant is an American restaurant located in the heart of Flatiron, overlooking Madison Square Park. It is helmed by acclaimed Chef and Restaurateur John Doherty, James Beard Award Winner and formerly the Executive Chef at the iconic Waldorf-Astoria in NYC. Its Executive Chef is Brian K. Fowler. Essential Duties:

Receive & examine incoming deliveries for quality and freshness

Record quantity of meat and fish received

Cut, trim, bone, tie and grind meat and fish

Cut & roast bones for stocks & sauces

Shape and lace using boning knife, skewer, and twine

Clean and sanitize cutting boards, following safety standards and hygiene

Competencies & Qualifications:

At least 2 years of experience in a high-volume restaurant

Strong manual dexterity

Basic understanding of cooking and fabrication of basic proteins

Knowledge of FIFO (first in/first out) method

Strong organizational skills

Strong English communication skills
