The Ideal Candidate for this Position

The ideal candidate will have extensive culinary work experience, especially with successful execution of a high volume of a banquet kitchen. The successful candidate must have hands-on experience with a similar organization's level of service and operation.

What You Will Be Doing

As a Sous Chef at the Marriott Hartford Downtown hotel, you will lead all aspects of banquet culinary operations, delivering exceptional food quality and service for catered events, conferences, weddings, and group functions. Youll play a key leadership role in menu development, event execution, kitchen supervision, and team developmentensuring every guest experience meets Marriotts high brand standards. This position is also responsible for employee dining and will also support the other food and beverage outlets. You will report to the Executive Chef.

Job Requirements

Your responsibilities will include but not limited to:

  • Supervise and coordinate the banquet culinary team during setup, service, and breakdown of all banquet functions.
  • Collaborate with the Executive Chef and Event Management team to develop creative, cost-effective banquet menus that align with guest expectations and seasonal trends.
  • Ensure food preparation and presentation exceed Marriott brand standards in quality, consistency, and visual appeal.

  • Monitor banquet food production to ensure proper quantity, timing, and portion control.

  • Oversee cleanliness and organization of all kitchen areas, ensuring compliance with local health and safety regulations.

  • Manage food cost, inventory, and waste for all banquet operations, maintaining target margins and minimizing loss.

  • Train, mentor, and schedule cooks and stewards to ensure a high-performing, motivated team.

  • Lead the kitchen team during large-scale events and high-volume operations, maintaining calm and efficiency.

  • Attend BEO (Banquet Event Order) meetings to align culinary execution with event logistics and guest needs.

  • Review banquet event order sheets on a daily basis and update any changes.
  • Brief the banquet kitchen staff daily about the upcoming and current functions.
  • Able to coordinate banquet production and plating with culinary and banquet staff.
  • Establish the days priorities and assign production and preparation tasks for the kitchen staff to execute.
  • Effectively communicate both verbally and in writing to provide clear direction to staff.
  • Responsible for managing all day-to-day operations of the kitchen.

  • Responsible for staff meals which includes planning and production of all staff meals.

  • Ability to multitask and stay calm under pressure.
  • Ability to stand for extended periods and lift up to 50 pounds.
  • Must be able to work a flexible schedule including nights, weekends and holidays.
Qualifications
  • Minimum of 35 years of culinary experience in a high-volume hotel, convention center, or banquet setting; Marriott or other full-service brand experience preferred.
  • Proven supervisory or management experience in a kitchen environment.
  • Culinary degree or certification from an accredited culinary school preferred.

  • Strong knowledge of banquet production techniques, menu planning, and event service standards.

  • Ability to manage multiple events simultaneously and adjust to guest needs in a fast-paced environment.

  • You must be able to pass a background check as well as be drug free.
