The team behind Molinaris is looking for a passionate and experienced Head Chef ( Sous Chef ) for Zocca Cucina Italiana , our new concept in Dedham Square. The ideal candidate will thrive in a fast-paced, high-volume upscale casual environment, a dedicated professional able to lead a team with culinary professionalism and enthusiasm fitting one of Bostons established concepts.
What you will do:
- First and foremost, manage all aspects of the kitchen operations. Working closely to ensure that the full scope of the culinary program is executed to the standards set.
- Supervise the kitchen staff; delegating tasks, providing guidance as needed, and ensuring efficiency.
- Manage and control inventory on a daily, weekly and monthly schedule.
- Build on fostering a professional, collaborative environment. Working alongside the management team for continuous improvement to execute top level hospitality.
Who we are looking for:
- 3+ years kitchen experience, with previous experience as a Sous a plus
- Knowledge of Italian cuisine always a plus
- Ability to retain composure and decorum in high-pressure circumstances
- Excellent organizational and time-management skills, ability to follow instruction and take initiative where needed
Detail of Responsibilities (included but not limited to):
- Implement & maintain the standards instilled throughout the concepts
- Oversee and instill the maintenance/continuity of food safety management in adherence with health dept requirements
- Active role in QC and eye on integrity for all plated items that leave the kitchen
- Train and supervise the BOH team, as well as motivate them to succeed
- Participate in effective and respectful communication with all levels of management and FOH team, continuously demonstrating a positive and welcoming environment
- This is a hands on chef position
