Role: Sommelier Location: Las Vegas, NV Status: Full-Time

Reports to: Wine Director and General Manager

POSITION SUMMARY

The Sommelier at Golden Steer Steakhouse works closely with the Wine Director and General Manager to support and elevate the restaurants wine and beverage program. This role blends deep wine knowledge with genuine hospitality, ensuring every guest receives expert guidance and an exceptional dining experience. The ideal candidate is passionate, detail-oriented, and thrives in a high-volume, fine-dining environment.

KEY RESPONSIBILITIES

Guest Experience & Service

  • Guide guests in selecting wines that complement their meals and individual preferences.
  • Ensure proper stemware is used for each varietal and style of wine.
  • Introduce yourself to each table; greet the host of banquet/event orders (BEOs) as required.
  • Provide beverage service to guests during breaks in wine service; participate in the tip pool accordingly.

Program & Operations

  • Partner with the Wine Director to ensure all beverage updatesincluding menu changes and POS adjustmentsare accurate and communicated to the team.
  • Monitor internal communications (Slack, company email, and pre-shift calendar) daily to stay current on BEO orders, wine updates, and training topics.
  • Manage wine orders on days the Wine Director is off; all orders should be submitted via email or the ordering portal with the Wine Director and General Manager copied, ensuring optimal pricing on case breaks and proper allocations.
  • Monitor wine inventory and manage reordering to maintain appropriate stock levels; increase by-the-glass pars during peak periods.
  • Ensure all wine deliveries are received and properly stored by 4pm daily.
  • Assist with end-of-month inventory counts; all sommeliers will be scheduled for those sessions.
  • Stay informed of delivery schedule changes due to holidays or citywide events.

Team & Education

  • Assist the Wine Director in educating and training FOH staff on all aspects of the beverage program to enhance the guest experience, increase value, and achieve financial goals.
  • Proactively communicate product interests and program ideas to the Wine Director.
  • Arrive on time for all scheduled shifts; check out with the Wine Director or Manager before departing.
  • Work a minimum of 6 hours per shift to qualify for a full point in the tip pool.

EXPERIENCE & QUALIFICATIONS

  • Extensive knowledge of global wine regions, varietals, terroir, vintages, and food pairings.
  • Prior sommelier or advanced wine service experience in a fine-dining or high-volume upscale restaurant preferred.
  • CMS, WSET, or equivalent wine certification preferred.
  • Familiarity with POS and inventory/beverage software a plus.
  • Strong communication and interpersonal skills with guests and colleagues.
  • Ability to thrive under pressure in a fast-paced environment with meticulous attention to detail.
  • Self-motivated with a genuine passion for wine, hospitality, and continuous learning.

PHYSICAL REQUIREMENTS & SCHEDULE

  • Must be able to stand and walk for the duration of a shift (typically 810 hours).
  • Must be able to hear clearly in a loud environment to respond to guest requests.
  • Must be able to reach, bend, and stoop as needed during service.
  • Must be able to carry trays and/or wine cases weighing up to 40lbs.
  • Availability for nights, weekends, and holidays is required.
