Position Summary

The Sous Chef supports the mission of the Wisconsin Historical Society and goals of Old World

Wisconsin by overseeing the operation of the Clausing Cafe, the Creamery, and assisting with

private events.

Food is a portal into our feelings and memories, at Old World Wisconsin we strive to spark

enthusiasm in our guests with food inspired by historic recipes and ideas, in addition to serving

recognizable everyday foods. Under the direction of the Food and Beverage Manager this

individual will, each day, attempt to exceed guest and peer expectations, and will be responsible

for the daily operations of the Clausing Cafe, the Creamery in addition to assisting with food prep

and other duties as assigned related to special events, onsite catering functions and banquets.

This individual is also responsible for the cleanliness and sanitation of all the food and beverage

areas in addition to guiding food and beverage staff in proper operational and sanitation

procedures. This individual will also need to maintain a Local (Town of Eagle) beverage servers

license and the Serv-Safe WI Food Handlers license (cost reimbursed by the state).

The Sous Chef reports to the Food and Beverage Manager

Responsibilities:

Under the direct supervision of the Food Service Director, operate the Clausing

Cafe and Creamery while maintaining a high standard of food quality and sanitation.

  • Be inclusive and show respect to staff, guests and peers at all times.
  • Prepare and stock menu items as outlined in the Clausing Cafe and Creamery SOP.
  • Complete cleaning checklist per the food site as outlined in the SOP.
  • Maintain stock of all items needed for cafe and creamery operations by utilizing the prep

list for each site.

  • Assist the food service manager with notifying items needed for operation of the cafe and

creamery.

Under the direct supervision of the Food Service Director, assist with food

preparation and other duties related to special events, banquets and operations across

the Old World Wisconsin site

  • Prepare food to a high standard of quality at all times on site.
  • Assist with food preparation for banquets, catering, and special events.
  • Assist at Creamery, Brewhouse, Tavern or any other location on site if needed

Other considerations:

  • This position will average 30 hours per week.
  • Must be available to work days, evenings, nights, weekends as well as special events.
  • Must be able to work both indoors and outdoors in air conditioned and non-air conditioned

spaces and in hot or cold weather

  • Be able to safely lift and easily maneuver trays of food.

Salary Information

Pay is $19.00 per hour with a weekend differential of 80 cents per hour. This classification is in schedule and class 03-10.

Please note this is a Limited Term Employment position so it does not include paid time off or benefits upon hire.

A criminal background check will be conducted by WHS prior to an offer of employment to determine if the circumstances of any conviction may be related to the job.

This is a Limited Term Employment (LTE) position and limited to 1,039 hours. This position will be part time and average 30 hours per week.

Wisconsin residency is required for Limited Term Employment positions.

Limited Term Employment (LTE) positions are not civil service classified positions, do not give any rights to permanent civil service classified positions and do not lead to permanent status.

WHS does not sponsor work visas. Any appointment made will be contingent on the applicant being able to prove valid status to work in the United States.

Qualifications

  • Excellent communication and interpersonal skills and enthusiasm for providing great guest

experiences. Customer service experience preferred.

  • Knowledge of sanitation and food safety standards.
  • Knowledge of food production methods and procedures.
  • Knowledge of and skill in use and care of standard restaurant equipment.
  • Portion control experience.
  • Knowledge of quality and inventory control.
  • Ability to work as a member of a team with all members of the food service staff.
  • Ability to work with minimum guidance and supervision.
  • Ability to do basic mathematical computations.
