Coordinates and direct all work assignments, hands on, in the Stewarding Department and ensure that organization, sanitation and cost of operation is consistent with the overall food and beverage goals and objectives. Monitors and manages inventory of service utensils and service ware for Food and Beverage Outlets and Banquet operations and minimizes exposure to loss. Ensures that the dishwashing staff is working effectively and efficiently. Oversees staff to ensure the highest levels of cleanliness and sanitation of all service utensils and service ware at the Resort, as well as all kitchens and food preparation areas, including ovens, grills, stoves, hoods, fryers, preparation slicers, steam kettles, hot boxes, tables, and floors. Ensures Food and Beverage Outlets and Banquet operations have the requisite amounts of the above to effectively service their operations. Ensures sufficient banquet carts and racks are available to place dirty dishes, silver, pots and pans. Maintains preventative maintenance program for Food and Beverage equipment and service ware. Oversees chemical and supply usage and acquisition. Provides ongoing training and support to Stewards. Coaches and counsels Stewards on their ongoing development; holds staff accountable to department standards. Ensures compliance with all Resort policies and procedures that relate to the relevant outlets and guest service. Department uniform is required and provided to the employee, which must be worn during scheduled work hours unless prior arrangements have been made with management. Must attend all mandatory department trainings. Must attend all required Title 31 and/or SARC trainings. Ensures confidentiality of financial records and all records for employees, band members and/or clients. Displays a responsive and professional manner in promptly responding to all requests, complaints, and problems. Recognizes that each employee is a representative of the Fond du Lac Band of Lake Superior Chippewa and is responsible for demonstrating courtesy, respect, and sensitivity to the needs of all others, including visitors and co-workers. Represents the Fond du Lac Band of Lake Superior Chippewa and the department in a positive and professional manner in the community. Required to maintain proper attendance including reporting to work on time in accordance with applicable policies. Maintains a clean and organized work area. Due to changes and modifications in the job from time to time, employees are required to be flexible and assume other responsibilities assigned by management as deemed necessary
