We are seeking an experienced and motivated Production Prep Cook to join our dynamic culinary team. This is a unique opportunity for a talented individual to be part of an ambitious, creative environment where precision and passion go hand-in-hand.
The Prep Cook is responsible for the initial preparation and all produce, meat, seafood, and poultry. She/he is also responsible for unloading deliveries, stocking and rotating products. This position is hourly-based.
Job Details
- Ingredient Preparation: Wash, peel, chop, slice, and portion vegetables, meats, and other ingredients according to standardized recipes and production plans.
- Batch Cooking Support: Assist in the preparation of large-volume recipes, including mixing sauces, marinades, and assembling bulk items under the direction of kitchen supervisors or chefs.
- Labeling & Storage: Properly label, date, and store all prepped ingredients and finished products in compliance with food safety standards and FIFO (First In, First Out) procedures.
- Food Safety & Sanitation: Follow all HACCP guidelines, maintain clean and sanitary workstations, and ensure proper handling and storage of raw and cooked foods.
- Equipment Operation: Operate commercial kitchen equipment such as slicers, blenders, ovens, and steam kettles safely and efficiently.
- Inventory Management: Assist with receiving, checking, and organizing deliveries; report shortages or spoiled items to supervisors.
- Portioning & Packaging: Portion, pack, and label items for delivery or distribution, ensuring consistency, accuracy, and adherence to packaging protocols.
- Team Collaboration: Work effectively with chefs, line cooks, and dish staff to maintain a smooth and efficient production workflow.
- Waste Minimization: Follow portion control guidelines and prep plans to reduce food waste and improve kitchen efficiency.
- Compliance & Reporting: Adhere to all company policies, health regulations, and commissary-specific operational procedures; promptly report issues or equipment malfunctions to management.
Competencies & Qualifications:
- 1 year of experience in high volume or fine dining environment
- Accurate knife skills
- Ability to read and follow recipes and standards
- Ability to produce a high volume of work in a timely manner, which is accurate, complete, and of high quality
- Actively practice food safety procedures
- Organizational skills
- Effective time management
- Ability to lift large items up to 50 pounds
