We are seeking a Sous Chef who will launch and manage the Lenovo Legend Club at Lenovo Center. This role will execute all aspects of dining in our exclusive space for Carolina Hurricanes and NC State Wolfpack games, as well as events outside of hockey and basketball season.
This brand-new space is an all-inclusive club for all first and second row ticket holders for the Carolina Hurricanes, as well as our bunker suites. Chef-attended stations, up-scale arena food, specialty cocktails and more await each guest for games and events. Located on the Arena Floor, guests will have continuous access to this upscale club space.
The Sous Chef works with the Executive Chef to create a menu including carving station items, sushi, canapes, desserts, and inventive, premium variations of traditional arena foods. They will also collaborate with the Lenovo Legend Club Hospitality Manager in the creation of specialty cocktail pairings for select menu items.
The Lenovo Legend Club Sous Chef is responsible for overseeing and directing the culinary operations of the club kitchen. The Sous Chef will work with the Executive Chef to hire, train, coach, and develop a culinary team capable of producing exciting items of impeccable quality. We're looking for someone with exceptional culinary expertise, strong leadership qualities, and unwavering commitment to the customer experience.
Responsibilities:
Collaborate with the Executive Chef to develop and execute a high-end menu for an upscale sports environment
Lead the culinary team, inspiring them to maintain high standards of quality, presentation, and taste
Supervise all kitchen staff on sanitation regulations, standards, and procedures
Oversee food preparation, cooking techniques, and presentation ensuring all items are consistent with established recipes and quality standards
Manage inventory, food costs, and equipment expenses meeting all budgetary goals while maintaining quality and freshness
Lead by example in creating a culture of collaboration, precision, excellence, and improvement for the culinary team
Enforce as necessary kitchen safety and sanitation in compliance with all governmental regulations and company standards
Communicate and collaborate with the front-of-house team to further company goals of seamless service and excellent customer service
Assist in menu planning, special events, and catering activities as needed
Interview, hire and train staff
Maintain employee schedules and maintain department payroll
Follow all company policies and procedures
Perform other duties and responsibilities as per business needs
Qualifications
5+ years' management experience in a high-volume banquet facility, fine dining restaurant, convention center, or sports venue
Culinary degree or certificate is a plus
Self-starter with a strong work ethic, who understands that hospitality is more than serving food, it's an experience
Superior leadership skills and a hands-on approach to kitchen operations, coaching, and training
Excellent interpersonal and communication skills that foster a productive, team focused kitchen
Adaptive to changing environments and situations, able to work alone or in teams
Experienced with all aspects of kitchen operations, including inventory management, COGS, and menu development and innovation
Administration skills, including basic computer skills like email, Microsoft Word and Excel
Must be able to work a flexible schedule including 60 or more hours per week which could include nights, weekends, and holidays
Must pass a criminal background check
