SUMMARY

We are seeking a dedicated Cook to join our Nutritional Services Department. Reporting to the Manager, Nutritional Services, you are responsible for preparation of meals for patients, cafeteria patrons and guests at special functions. The cook is also to ensure all regulatory agencies' sanitation guidelines are being followed.

ESSENTIAL DUTIES AND RESPONSIBILITIES

Opens/closes kitchen, turns on/off steam tables, warmers, plate and base warmers, and cooking equipment.

Prepares food for patients, cafeteria customers, and guests at special functions, utilizing production guidelines and standardized recipes. Checks for proper portion control and temperatures of food.

Gets supplies needed from the storeroom and freezer.

Replenishes food on steam tables during meal service.

Properly evaluates leftovers for reuse, quickly reducing their temperatures to less than 40 degrees F. Reuses leftovers within safety guidelines.

Keeps work area clean and sanitized at all times. Follows other regulatory agencies sanitation guidelines.

Makes preparations for 2 days' ahead meals.

Fills steam tables if needed when placing food in tables.

Works tray line as needed.

Properly covers, labels and dates all food in refrigerators.

Manages own time in a productive and reliable manner completing work assignments on time.

Completes appropriate volume of work while maintaining quality standards.

Organizes work procedures to general acceptable levels of productivity.

Completes own work as required and will assist others as needed.

Cooperates with coworkers and management to maintain a harmonious environment.

Adjusts work schedule to accommodate changing priorities.

Operates assigned equipment and performs all procedures in a safe manner.

Utilizes proper body mechanics in all job functions.

Follows established emergency, infection control and/or universal precautions procedures as required.

Maintains work area and equipment according to standards and policies.

Attends mandatory in-services related to safety and/or infection control.

Communicates in a professional manner emphasizing objectivity and non-judgmental viewpoints.

Assists in solving customer problems in a cooperative manner.

Performs all other duties as assigned.

COMPLIANCE RESPONSIBILITIES

Understands and adheres to Loretto Hospital's compliance standards as they appear in the Compliance Policy, Code of Conduct and Conflict of Interest Policy.

Keeps abreast of all pertinent federal, state and Hospital regulations, laws, and policies as they presently exist and as they change or are modified.

QUALIFICATIONS

Required:

High School Diploma or GED

Previous Experience as a cook

Current Food Service Sanitation Certificate - Chicago Board of Health

Experience using all institutional cooking equipment

PHYSICAL DEMANDS

While performing the duties of this job, the employee is frequently required to sit, stand and walk as well as occasionally stoop, kneel, crouch or crawl. Using proper body mechanics, the employee may be expected to lift, pull, push or move patients and/or equipment. Fine motor skills are required when using hands and fingers to handle, feel or reach. Normal or corrected vision, hearing and ability to speak are necessary. Specific vision abilities required include close vision, sharp eye focus and ability to distinguish colors. There will be periods of stressful intense concentration with more than average pressure used in a variety of problem-solving situations.
