POSITION PURPOSE
Work as a key team member in a dynamic, high volume full-service restaurant setting. This position functions as a cook, and preps and executes service for Saute, Grill, Fryer, and/or Pantry with other full time and student employees. Typical work includes grilling steaks and burgers to order, cooking a la minute pasta and risotto dishes, and all associated prep for a restaurant serving over 400 covers daily.
DUTIES AND RESPONSIBILITIES
Perform cooking in a brigade setting to customer order, plating according to established standards and answering questions about ingredients, recipes and pricing.
Using CBORD recipes and specifications, prepare menu items including proteins, vegetables, fruits, starches, and sauces.
Marinate, grill, roast, griddle and carve proteins; steam vegetables and starches.
Review recipes and consult with the unit's Sous Chef to confirm production goals and service needs. Seek prior approval before deviation from assigned recipes and specifications
Organize work to meet daily production goals and service needs.
Guide the work of classified and student food service staff.
Monitor prepared foods for compliance with Washington State health code regulations, including taking and recording food temperatures before the food leaves the production area.
Participate in cleaning the kitchen's tables and equipment using soap, cleaning supplies, and sanitizing solutions as needed.
Ensure that all foods used for the meal are properly wrapped, dated, labeled and stored before the close of the shift.
Ensure that all items in walk-in and in other storage areas are properly labeled and rotated correctly. Work with other staff members to ensure that this is being completed.
Maintain records of foods produced, foods wasted, and any recipe adjustments for the culinary leadership.
Inspect food service equipment to determine proper care, use and operation; report malfunctions to unit leadership.
Continuously clean and maintain order of workstation and prep areas, including sweeping, mopping, and sanitizing.
Ensure that security and safety requirements are met; follow up with staff and supervisor on any issues.
Consult with culinary leadership to address requests to accommodate dietary restrictions.
Maintains regular and consistent attendance and punctuality
Perform related duties as requested.
May operate point of sale system, accurately key in sales and take payment.
Maintain compliance with all PCI training requirements and standards.
Perform related duties as requested.
POSITION DIMENSIONS
This is a 9-month cyclic position. Schedules may be changed with two weeks' notice.
MINIMUM REQUIREMENTS
Possession of, or eligible to obtain a Washington State Food Worker Card within two weeks of employment AND one year of experience preparing and serving food and maintaining clean work area.
Equivalent education and/or experience may substitute for minimum qualifications except when there are legal requirements, such as a license, certification, and/or registration.
CONDITIONS OF EMPLOYMENT
A satisfactory outcome from the employment verification and reference check processes.
Maintenance of a valid Washington State Food Worker Card.
DESIRED QUALIFICATIONS
Experience using email, menu management systems, Microsoft Word and Excel.
Experience working in a high-volume restaurant setting
Experience working with standardized recipes
Familiarity with menu management systems.
