Job Summary:

The Jones Assembly is seeking an experienced, hands-on Kitchen Manager to lead the daily operations of our high-volume, scratch kitchen. This role is vital in ensuring smooth service, upholding food quality and safety standards, supporting kitchen staff, and managing systems and costs with precision. Youll work closely with the Executive Chef and front-of-house leadership to create a kitchen culture rooted in consistency, cleanliness, and collaboration.

Key Responsibilities:

Daily Operations

Oversee daily kitchen operations including prep, service, cleaning, and shift transitions.

Maintain kitchen cleanliness and organization to the highest standard.

Ensure all kitchen equipment is properly maintained and functional; coordinate repairs when necessary.

Staff Leadership

Supervise, train, and schedule kitchen staff including line cooks, prep cooks, and dish team.

Foster a culture of accountability, professionalism, and respect.

Assist in onboarding and performance evaluations, offering feedback and coaching.

Food Quality & Safety

Enforce all food safety and sanitation guidelines (HACCP, FIFO, temperature logs, etc.).

Ensure food is consistently prepared and presented according to Jones Assembly standards.

Conduct regular walk-throughs and line checks during service to ensure readiness and quality.

Inventory & Cost Control

Manage inventory systems including weekly counts and ordering in coordination with the Chef.

Monitor food and labor costs to ensure targets are met.

Track and minimize waste through portion control, prep oversight, and team education.

Compliance & Recordkeeping

Maintain proper documentation for health inspections, sanitation checklists, and vendor invoices.

Ensure all BOH team members have up-to-date food handler certifications (if applicable).

Prepare for and support all health department visits or audits.

Qualifications:

35 years of kitchen management or lead line cook experience in a high-volume, full-service restaurant.

Strong working knowledge of kitchen systems, food safety, prep, and service flow.

Proven ability to lead teams in a fast-paced, high-pressure environment.

Exceptional organizational, communication, and problem-solving skills.

Experience with inventory and ordering systems.

ServSafe Manager Certification preferred (or willing to obtain within 30 days).
