General Purpose:
The dish and general utility position is responsible for maintaining cleanliness and sanitation standards for china, glassware, tableware, cooking utensils, pots and pans etc., using machine and manual cleaning methods. This position also ensures that the kitchen and dishwashing areas are maintained as clean, safe and sanitary and are in accordance to County and ODH guidelines.
Essential Duties and Responsibilities :
- Sort and rinse dirty dishes, glass, tableware and other cooking utensils and place them in racks to send through dish machine.
- Sort and stack clean dishes. Carry clean dishes to cook’s line and other proper storage areas. Rewash soiled dishes before delivering.
- Change dishwater in dish machine regularly. Sign log with time and date.
- Fill/empty soak tubs with cleaning/sanitizing solutions. Test sanitizer for strength 200ppm. Adjust if necessary. Wash pots, pans and trays in 3 compartment sink.
- Daily venue assistance- breakfast pots and pans Crane, dishes and pans from Prep, lunch dishes from Bistro and Crane, dinner pots and pans from Bistro and Crane and Radius Dinner service in Radius kitchen and prep kitchen
- Remove trash to dumpster. Break down boxes and recycle. Remove recyclables to proper dumpster.
- Set up or break down dishwashing area, drop down mats, take up and clean daily.
- Sweep/mop floors. Display safety signs.
- Assemble/disassemble dish machine daily. Soak arms and rinse traps daily.
- Conduct detailing in all restaurants, serving kitchens and prep kitchen.
- Wipe up any spills and display wet floor signs to ensure kitchen floors remain dry and safe.
- Take equipment temperatures including dish machines AM and PM Shifts. Notify manager any time dish machine wash or rinse cycle falls or refrigeration equipment falls below safety standard temperatures.
- Wash hands after touching dirty dishes and before touching clean dishes.
- Other duties as directed.

Minimum Qualifications, Education and Certifications :
- High school Senior with work permit if needed, High School diploma or GED.
- ServSafe Food Handler, training will be provided if needed
- No experience is required, will train.
- Ability to read, write, and follow written and oral instructions
- Complies with health and sanitation guidelines, aware of State and County expectations
- Clean uniform, apron, hat/beard net and gloves, name tag are expectations. No personal cell phone use in restaurants and common public areas, aware of all open kitchen surroundings
- Strong critical thinking and time management skills.
- Ability to safely operate industrial machinery, and carry loads up to 40 pounds.
- South Franklin Circle serves meals daily. Working variable weekends, holidays and special event caterings may be required
Working Conditions: This job operates in a kitchen environment. This role routinely uses sinks, dishwashers and tools to clean kitchen appliances and floors. Employees in this role are frequently exposed to hot water, potentially slippery floors, garbage disposals and cleaning chemicals.
Tier I: as listed
Tier II: Tier I, 3 years of previous experience
The ability to perform assigned duties with limited supervision
Train new hires, delegate detailing, understands daily schedule of events and is able to
get dishes from each venue at the proper times. Helps kitchen associates as requested.
Tier III: Tier II, 5 years of previous experience
Guide associates in making and keeping the kitchens clean and orderly-everything in its place
Cognizant of daily special events, scheduling and anticipates and assists with extra tasks
Self-starter with vested interest in keeping up with the sanitation and appearance of all dining services facilities
