The Dining Service Manager is responsible for Valley Manor Dining Experience. The Service Manager will manage the day-to-day front of the house operations of the full-service restaurant, the Bistro and in-house functions/events. The Service Manager is responsible for all service-related departmental procedures and training and ensures compliance with the front of the house staff. It is a requirement of this position to provide direct care or have access to resident property or belongings.

ESSENTIAL JOB FUNCTIONS

  • Works in conjunction with the Executive Chef to provide a full service restaurant dining experience.
  • As member of the Valley Manor Leadership team, this position is required to attend monthly building management and resident association meetings to ensure resident needs are heard and followed up on in a timely manner.
  • Prioritize resident service satisfaction by providing a strong presence in the Valley Manor Dining Room and Bistro during the hours of operation.
  • Determine and implement strategies to improve customer satisfaction and team performance.
  • Responsible for the front of the house and Bistro hiring, performance evaluations, recognition, training, coaching, scheduling, and discipline activity. This includes all Servers, Hostesses, Bartenders and Bussers, aka front of the house service staff.
  • Oversight of service operations within the dining room and Bistro. The full oversight is a shared responsibility with the Executive Chef and Crew Leaders, working evenings, weekends, and holidays to support the needs of the department, customers, employees, and residents of Valley Manor.
  • Monitor all internally delivered dining functions for proper set-up, quality of product and customer satisfaction.
  • Oversee operations and maintenance of the Point of Sales system and all that is involved including resident billing.
  • Implement and train staff in how to use the point-of-sale system.
  • Oversee the sanitation and safety of the Valley Manor dining room and Bistro.
  • Oversee all dedicated events for residents and resident family members.
  • Responsible for billing all special events and billing/invoices related to the Bistro.
  • Facilitates monthly department meetings with staff and weekly meetings with key support staff.
  • Meet with corporate director of dining and hospitality monthly to review department audit, payroll expense related to budget and overall service satisfaction.
  • All other duties as assigned.
Requirements

QUALIFICATIONS: Knowledge of fine dining restaurant service. Knowledge of Monroe County Health Department regulations on food service and sanitation. Level one ServeSafe or comparable certification. Demonstrate leadership, organization, and communication skills. Ability to represent the Episcopal SeniorLife Communities and interact effectively with any outside agencies or vendors. Ability to interact courteously and tactfully with staff, residents, family members, visitors, vendors, and the public.

EDUCATION: A minimum of an Associates degree from an accredited college, or comparable experience.

EXPERIENCE: A minimum of 3 years full-service restaurant in a fine dining, table service restaurant experience. Strong people skills and the ability to manage a staff of up to forty-five. Must possess the ability to contribute with basic food preparation. Knowledge of in-house and off-site catering.

SUPERVISORY RELATIONSHIP: The work is performed within established guidelines and requires periodic supervision. The employee exercises some initiative and independent judgment to effectively perform the essential job duties of this position.

RESPONSIBILITY FOR OTHERS: The employee has responsibility for all employees in the food service department.

SAFETY RESPONSIBILITIES: Must be fully acquainted with all safety policies and procedures of the

Episcopal SeniorLife Communities. Takes an active role in all fire drills during the shift and/or emergencies for internal and external disasters as monitored by supervisor and incident manager. Must comply with facility in-service requirements.

Maintain confidentiality of all information related to the organization, residents, participants, family, and staff, which may be encountered, either formally or informally, during the normal course of business. This includes medical and treatment records, financial and human resources information.
