The Executive Chef is responsible with providing our members with excellent dining experience with good quality food and service, reasonable prices, consistency, in an attractive environment with a professional staff.

Position Responsibilities

Supervise, coordinate and plan all related culinary activities including daily events and function menu planning, ordering and cost controls.

Select/Develop recipes and work to standardize production to ensure consistent quality

Ensure proper safety and sanitation regulations are being followed

Directly supervise kitchen personnel with responsibility for hiring, coaching/feedback, employee relations and review/merit increases.

Responsible for food and labor cost controls to positively impact financial performance

Assist Executive Chef with ordering, scheduling, inventory, menu development including cost controls, recipes, food production schedules and production consistency

Daily responsibilities include preparation and setup of the line station and working of service.

Make recommendations for maintenance, repairs and upkeep of kitchen

Interacts with the Clubhouse Manager and Assistant Managers to assure that implementation of food service meets high standards of the Club

Reports to General Manager and Senior Executive Chef regarding all events

Solve all complaints satisfactorily and to always exceed customer expectations

Promotes mutual respect within the kitchen and through all departments

Ensure budgeted food costs are met by structured, conservative buying and produce utilization.

Keep up to date records for compliance with health and safety regulations including temperature control

To maintain exemplary cleanliness and hygiene standards in all food areas relevant to the kitchen department. Meet all company and statutory requirements with regards to food hygiene and employee health and hygiene

Adheres to all company policies, procedures and business ethic codes

Other duties as assigned

Knowledge, Skills and Abilities

Culinary School graduate or equivalent time in experience

Culinary ability to plan, prepare basic sauces, soups, salads and dishes with minimum supervision

5+ years of industry and culinary management experience

Minimum of 1 year management experience to include employee relations, performance management, hiring, training and coaching

Experience with menu production, menu creating and banquets

Experience with controlling food and labor costs

Knowledge of all applicable health, sanitation and licensing ordinances

Professional cooking and knife handling skills.

Understanding and knowledge of safety, sanitation and food handling procedures.

Previous experience as a prep or line cook

Creative menu development skills.

Solid understanding of a la carte and banquet revenue generation.

Ability to work calmly and effectively under pressure.

Commitment to quality service, food and beverage knowledge

Ability to multitask in a fast-paced organization

A superior work ethic and positive work culture

Desire to work collaboratively with colleagues

Preferred Skills

Baking knowledge

Bilingual

Physical Demands and Work Environment

Ability to lift, move, push and pull equipment or boxes in excess of 40lbs.

Should be able to handle outdoor temperatures for a reasonable period of time.

Must be able to move around campus which includes gym, turf, fields, etc.

Ability to work flexible hours to include nights, weekends and holidays is required
