Chef de Cuisine Requirements and Qualifications
- Collaborative leadership, able to partner with the Executive Chef and multiple other departments. Foster a positive kitchen environment.
- Leadership experience in a professional restaurant kitchen doing volume of at least 2 million.
- Hands on mentorship leadership style, able to train, motivate and uphold high standards.
- Able to plan, execute and follow through on a la carte service and functions. A multi-tasker.
- Menu planning skills, prep list and game plan to successfully execute top quality service. Creative and up to speed on current trends.
- Strong organization and communication skills, able to handle all administrative tasks. Recipes, menu costing, production sheets, and prep lists. Strong communications skills.
- Able to monitor and control costs, food cost, labor cost, able to schedule to business levels.
- Love what you do, passion for cooking, developing the team and guest service.
Chef de Cuisine Preferred Background and Skills
- Culinary degree is preferred, if not culinary degree, then experience must match responsibility.
- Barbecue and smoking experience is a plus.
- Leadership experience in a professional restaurant kitchen in a high-end hotel or resort is preferred.
- Experience with Birchstreet or kronos is a plus, but must learn systems quickly. Able to stay organized with email, calendar, and follow through on tasks.
- Experience on-camera or in person, cooking demos and/ or cooking classes, able to speak to guests and the media.
